Easiest Crock Pot Chicken Teriyaki (AIP, Paleo) – Hurried Health Nut
This AIP Crock Pot Chicken Teriyaki is the easiest recipe you’ll ever make. Mix the sauce, add to the chicken and let the clay pot do the rest. It even makes enough sauce to sprinkle on one side of steamed vegetables!
You may already know this about me, but I am a very lazy cook. Don’t get me wrong, I love cooking and I love delicious, healthy, homemade food. But I hate following long, complicated recipes. I want simple, quick and easy recipes with minimal ingredients! And I want them to taste good! And make me feel good!
Are you the same way?
If so, this AIP Crock Pot Chicken Teriyaki recipe is for you! If you have a well-stocked AIP or Paleo pantry and fridge, you probably already have everything you need to make this recipe. There is no need for additional trips to the grocery store, or farmers market to pick up special ingredients. Only 6 ingredients and 5 minutes of practical time, and you’re done!
Plus, this recipe is amazing for meal preparation! Just do it ahead of time, divide it into individual portions, and heat it in the microwave when you’re ready to eat.
The
only equipment you will need for this AIP Crock Pot Chicken Teriyaki is a positive attitude!
Just kidding.
You’ll also need a Crock Pot, slow cooker, or instant cooker (which has a slow cooker feature). Also, measuring spoons and measuring cups. And maybe a small bowl to mix and beat. However, I’ve definitely mixed this sauce with a spoon in a bowl of standard cereal before, so you do.
Ingredients for the
Easiest Crock Pot Chicken Teriyaki
As I said, the ingredients for this recipe should already be in your fridge or pantry, which is what makes this recipe so great. You just have to plan it! Here’s what you’ll need:
1 pound chicken breasts or thighs 1/2
- tablespoon arrowroot starch
- garlic powder 2 teaspoons
- ground ginger
- 1 tablespoon
- honey
- 3/4 cup coconut amino acids
- chicken breasts or
1 tablespoon water 2 teaspoons
Just add your
thighs
to your slow cooker (thighs are always my favorite, But you do it!).
Then, in a separate container, first mix arrowroot starch (sometimes called arrowroot flour) and water. Combining arrowroot with water helps it blend better with other ingredients. Sometimes, if you don’t do this step first, arrowroot becomes… gross. And we don’t want chopped sauce. Brute!
Once the arrowroot and water are well combined, add the rest of the ingredients (garlic powder, ground ginger, honey and coconut amino acids) to the bowl and mix again, until you get a tasty sauce. Then, pour that delicious sauce over your chicken in the slow cooker, cover and simmer for 4-5 hours. You may need a little more time, depending on how big your chicken pieces are. Just check that it is fully cooked and move on to the next step.
Then, crush the chicken with two forks (I just do this directly in the clay pot) and stir to completely cover the chicken with sauce. Dinner is served!
What to serve with this AIP Crock Pot Chicken Teriyaki
The best thing about this recipe is that it is very versatile! I usually serve it over cauliflower rice, but you can use regular white rice if you’re not following AIP or Paleo. Also, I like to pack as many vegetables as possible, so I often serve it with a side of steamed or roasted broccoli as well. Steamed or sautéed shredded cabbage and/or carrots also combine well. It also goes great with zucchini and/or red peppers (which are not AIPs, but are Paleo). Or eggplants and snow peas (none of which are AIPs, but are Paleo).
In fact, I’m struggling to think of a vegetable that this wouldn’t pair well with. Go crazy! Cook what’s in season!
