This recipe is ideal to prepare in advance since the sauce, meat and all flavors have plenty of time to get comfortable. Simply cover and store in the refrigerator overnight, then put it back in the clay pot the next day with 1/2 – 1 cup of beef broth and heat over high heat for 1 hour.
It also freezes well. Simply cover leftovers tightly or put them in a zippered freezer bag and freeze for up to 2 months. Defrost in the fridge overnight and follow the instructions above to heat.
