I’m thrilled to be featured in such a delicious magazine and the NSN McDonald’s buffalo chicken nuggets they chose to share are one of Boy’s favorite recipes.

This is the kind of stick to your ribs, fleshy chili that makes Boy’s heart turn into a pitter patter.
He’s just a beef purist. And he gave this chili very favorable reviews.
Which was to be expected, because I made this chili specifically for him… and for all “beef. It’s what’s for dinner” readers out there. In addition to being superbly fleshy with chunks of tender, juicy, succulent boneless beef rib, this chili is smoky, slightly spicy and fabulously tasty.
The chili liquid in general is not too thick or too thin, it is soft and velvety with a touch of tortilla and corn flavor, thanks to the addition of masa harina.
Chocolate stout adds a certain je-ne-sais-quoi to chili. It’s not too powerful, but it definitely adds a bit of ‘-something’-something’.
While all ingredients are optional, they give the chili a tempting Tex-Mex flavor… And if you ask me, they shouldn’t really be optional.
I mean, what normal person doesn’t want to load their chili pepper with more flavor. And tons of cheese?
exactly. This chili is fairly easy to assemble, thanks to the reliable slow cooker. But, this is not throwing it away and ready, stupid easy. Waiiiiit, don’t run away. Listen!
First you have to brown the short rib cubes, transfer them to the slow cooker, then sauté the onions, garlic and deglaze the pan.
It’s a small step, but the amount and depth of flavor it adds to the chili is unreal. Worth the 5 minutes.
Trust me. So if your jam is an outrageously delicious chili, then this short rib chili with chocolate dark beer should happen in your kitchen. Immediately. Until Thursday friends, greetings, drink your beer and eat it too. 🍻
