The first step in making Instant Pot Sirloin Roast with Mashed Potatoes was to peel and cut the potatoes. How many depends on how many people you have eating the food. I used 6 large potatoes and then placed them in a steam basket.

Preparing the potatoes.

The next step was to pour the olive oil into the Instant Pot and turn the Pot to the sauté function. I also sprinkled a teaspoon of Montreal Steak Spice for more flavor.

Using a large fork to serve I removed the roast to a plate, turned off the stir-fry function and added the meat broth.

I made sure to scrape all the brown pieces from the bottom of the pot.

This deglazing step is very important

After deglazing, I placed the trivet in the pot and lowered the scorched

roast on top.

I placed the steam basket full of potatoes on top of the roast.

Adding the potato steam basket to the pot.

Then I placed the lid on the instant pot,

turned the steam release handle to the sealing position, and put the instant pot in high-pressure cooking for 32

minutes.

When the instant pot finished cooking, I let it release naturally for 8 minutes.

Then I turned the steam release handle to the vent position to finish with a quick release.

I also poured the broth. To 2 cups of broth I added the two packets of meat sauce mixture and placed it in the microwave for 3 minutes stirring once.

While cooking the sauce, I returned the potatoes to the instant pot and added some of the remaining broth and 2 tablespoons of margarine

I used a potato crusher

to make the

mashed potatoes. Make the mashed potatoes.

  1. Peel and cut the potatoes. Place them in a steam basket for the Instant Pot or they can be placed around the meat before putting the lid on.
  2. Pour the olive oil into Instant Pot and put it to work. Sprinkle 1 teaspoon of Montreal Steak Spice over the oil in the pot.
  3. Lower the roasted sirloin in the instant pot and sprinkle the top with 1/2 teaspoon of Montreal Steak Spice. Seal both sides for about 3 minutes per side.
  4. Remove the roast from the pot.
  5. Add the beef broth and scrape the bottom of the pot very well to deglaze.
  6. Return the roast to the pot by placing it on a rack.
  7. Place the steam basket with the potatoes on top of the roast.
  8. Place the lid on the instant cooker,

  9. turn the steam release handle to the sealing position, and place the instant cooker in high pressure cooking for 32 minutes.
  10. When the instant pot has finished cooking, let it release naturally for 8 minutes. Then turn the steam release handle to the vent position to finish with a quick release.
  11. Using oven gloves carefully remove the potatoes and roast.
  12. Pour the broth into a measuring cup. Use 2 cups of broth and add the two packets of sauce mix.
  13. Stir well and then place the sauce in the microwave over high heat for 3 minutes, stirring once.
  14. While the sauce is cooking, return the potatoes to the instant pot. Add some of the remaining broth and 2 tablespoons of margarine. Use a potato crusher to make the mashed potatoes.
  15. Cut the roast and serve with your favorite side dishes.
