Slow Cook Stew and Meatballs: This hearty stew topped with herb dumplings is THE perfect comfort food. This easy crockpot meat casserole doesn’t require browning, just sit back and let your slow cooker do all the work. Serve with my roasted potatoes with goose fat.

A warm and satisfying traditional meat stew does not need accompaniments, just place it in a bowl and enjoy! In addition, it is also friendly to lose weight with small adjustments.

Everyone needs a simple slow-cooked beef casserole, perfect for hectic days when cooking is the last thing on your mind. It’s just the comforting food to lift your spirits and SO EASY to put together!

And what would meat stew without meatballs be? These add a little more work to an otherwise uncomplicated recipe, but turn this simple homemade stew into a whole pot meal.

is the secret weapon of thrifty cooks. You can use cheaper cuts of meat, as slow cooking will extract maximum flavor and result in tender meat melting.

I used stew steak for

my beef stew, but you can use any type of stew meat that is suitable for stews like breast or chuck steak

.

The beef is first tossed into a little flour that helps thicken the sauce. I would normally advise you to brown meat in oil first, but this recipe is all about simplicity. And, possibly, laziness!

I have used onions, leeks, carrots and parsnips to round out my stew. In truth, you can use any tuber you want, such as potatoes, Swedish, and pumpkin.

You can even use frozen “casserole mix vegetables” that come already cut and ready to use if you’re short on time. These will need to be thawed first before adding them to your stew.

Meat and vegetables are cooked slowly in a mixture of meat broth and red wine. Soy sauce, Worcestershire sauce or balsamic vinegar, tomato paste, minced garlic and herbs add depth of flavor.

Crockpot Dumplings Dumplings

make this meat stew more filling and substantial, not to mention delicious! Tallow dumplings are the traditional choice and are very easy to make.

However, if you prefer to make meatballs without tallow, I have provided a lighter option that is equally delicious (also used in my slimming chicken casserole).

The dumpling can be flavored with cheese, mustard, herbs and spices: I used grated Parmesan cheese and chopped chives in my recipe. Use Stilton cheese instead of Parmesan sauce or horseradish if you want a bolder flavor.

Lightly season the flour with salt and pepper. Mix the meat cubes with the flour to cover lightly.

Preheat the slow cooker to “HIGH”. Add hot beef broth, red wine, soy sauce, balsamic vinegar (or Worcestershire sauce), chopped garlic, tomato paste, salt, and pepper. Give everyone a good stir.

Add onions, leeks, parsnips and carrots. Add the meat, add the bay leaves and rosemary and cook in HIGH for 5 hours (or in LOW for 8 hours).

or tallow meatballs or meatballs without tallow.

Stir the stew well. Remove and discard bay leaves and rosemary. Add the dumplings to the slow cooker, separated slightly. Cover and cook in the HIGH setting for an additional hour with the lid on.

Test and adjust seasoning if necessary. Garnish with parsley and serve alone or with mashed potatoes. Delicious!

Storage and freezing

The leftover stew will keep in the fridge for 2-3 days. You can also freeze the meat stew (without the meatballs) if you wish. Cool completely first, divide into suitable containers, label and use within three months. Be sure to reheat the stew until it is very hot to the end before serving.

Replace

red wine with more hot meat broth. This recipe is low in syns, about 2 per serving if divided into six servings.

Opt for light meatballs, if you use them. These are approximately 4 syns per dumpling. The small amount of Parmesan cheese in them is an extra healthy.
