Most of my family lives in Wisconsin. In addition to the Packers, Wisconsin is known for its beer, brats and cheese.

In this slow brew brats recipe, I’ll teach you the tricks

I’ve learned about how to cook the most delicious crockpot brats and onions you’ve ever made!

People living in Wisconsin have their own tricks for making

the perfect brats.

Some people cook them in beer and onions before grilling them and others

roast the brats first.

I prefer to roast my brats first to enclose the crispy skin.

To make the BEST slow cooker, brat and onions, you will need the following ingredients


  • onions: I prefer yellow or white
  • onion butter beer

  • , choose a good bold taste
  • Brats: Simple brat is optimal because it’s flavoring with beer and onion
  • sweet barbecue sauce—

  • choose a thick sauce hot sauce—
  • I use Texas Pete, but you can use any type you like
  • Dijon Mustard

is SUPER EASY! Follow these simple steps to do.

  1. Cut the onions into thick rings. (photo 1)
  2. Sauté onions in butter until soft, but not fully cooked. Do not caramelize. (photo 2)
  3. In a bowl, combine the barbecue sauce, Dijon mustard and hot sauce. Mix well. (photo 3)
  4. Add the onions to the slow cooker. Pour the barbecue sauce mixture over the onions and mix well. (photo 4)
  5. Grill the brat for about 3 minutes on each side to crunch the outer skin. (photo 5)
  6. Add brat to Crockpot. Pour the beer over the onions and brats. Cook in Crockpot for 6 to 7 hours over low heat. (photo 6)

Cooking your brat

long and slowly in beer sauce allows the brat and onions to absorb that amazing

beer flavor.

Tip: This is an opportunity to cook with a very good tasting beer. Some people use a cheap light beer, but brats can handle a tasty beer.

I like to use a locally brewed hop craft beer from Dirtbag Ales. Dirtbag Ales is a large small brewery located in Hope Mills, North Carolina.

If you have the opportunity to visit the place; the beer is good and the atmosphere is fun.

Tip: If you don’t want to use a grill, you can crunch the outer skin of brats in a cast iron pan or skillet. Cook 3 minutes on each side.
