Happy 2021!! Here is the prayer that this year will be kind to us and return to normal! Did you make any resolutions? Start a new diet? Set new intentions?

I usually make a TON of resolutions and do pretty well keeping most of them. However, I kept it light this year and made only three resolutions. 2020 was such a transformative and self-reflective year that my perspective on many things has changed.

One of my intentions is to cook more for pleasure And not only when I’m in a hurry to dine at the table or for Divas Can Cook.

I’ve noticed over the years that I’m usually in such a hurry while cooking that I didn’t enjoy it as much as I used to. I forgot how satisfying the process of creating a meal from start to finish is for me.

Buy all the ingredients, smell the spices, cut the fresh produce, listen to the sound of something sautéing, plate everything and watch my family devour it. Cooking with patience and love feeds my core. I’m dedicating 2021 to myself. It will be a year full of what makes me happy. Experiences that satisfy the soul! I’m excited!

To achieve this new intention, I have let go of a few things in my schedule so that I have more time to REALLY cook. Yall, I LOVE it, and naturally, my family is too!

It’s like discovering a new passion. I’m really excited for next week because I have some special peppers coming in the mail. I’m making homemade chili, and of course, homemade chili requires homemade cornbread!

I have a lot of cornbread recipes because we are a divided house when it comes to cornbread! My husband and kids prefer sweet cornbread, and I’m a sugar-free cornbread girl from start to finish. But every once in a while, I crave this wet and sweet cornbread! It pleases everyone in the house, and is a good complement to hot chili.

I love this sweet cornbread because it has just the right amount of sweetness and rustic texture! I love soft cornbread, but I don’t want my cornbread to taste like cake. This sweet cornbread is so moist and tender.

It’s topped with a brushed creamy honey butter that makes it so perfect!

  1. Don’t mix too much. Once you add the wet ingredients to the dry ingredients, be sure to stir only until they are combined. Excessive mixing will result in a dried cornbread.
  2. Cover with aluminum foil if necessary. If the top starts to brown too quickly, cover with aluminum foil for the last 5-10 minutes. This will ensure a beautiful golden cornbread.
  3. Use yellow cornmeal. Yellow cornbread will produce a cornbread that has more texture and yellow color; White cornmeal will make a fluffier cornbread.


cornmeal: Yellow cornmeal is thick and gives a great color to cornbread, but you can use white cornmeal if you want. Be sure to get the simple cornmeal and not the cornmeal mixture.

All-purpose flour: The flour will add the softness needed to make this cornbread tender.

Baking powder, baking soda, salt – these are the three leavening agents I like to use on my sweet cornbread. Create a cornbread that rises beautifully but is not too fluffy and cakey.

Granulated sugar: For sweetness.

Honey: For a “touch of honey” sweetness.
