1 avocado; finely chopped

red wine
vinegar
2 tablespoons extra virgin olive oil
Method
Mix all the ingredients together in a small bowl. Place the bowl in the refrigerator. Shuck oysters. Top each oyster with a tablespoon of sauce.

Creamy oyster soup Serve

/2 cup (125 ml) light cream 2
tablespoons parsley; finely chopped
1 teaspoon chili flakes (or Tabasco red pepper sauce)
Method
Discard the oysters and place the oyster meat and liquor (the clear, filtered seawater inside the half shell) in a bowl and place them in the fridge. Melt the butter in a small saucepan over medium heat. Add the milk and cream. When milk and cream are hot, add oyster meat and liquor, parsley, chili flakes, and salt and pepper. Stir until combined and hot for a few minutes, but don’t overcook the oysters. Spit out the soup in bowls and serve with slices of sourdough bread.

Grilled oysters with Thai butter

unsalted butter
1 garlic clove; chopped 1

Method
Heat small skillet over medium heat. Add oil, butter and other ingredients. Stir until combined, then remove from heat. Shuck oysters. Top each oyster with a tablespoon of sauce. Roast the oysters for 1-3 minutes or until the edges of the oyster meat begin to curve.

Oysters Kilpatrick

smoked bacon rashers, without crust; thinly sliced

balsamic vinegar 2 tablespoons

Heat the small pan over medium heat. Add vinegar, butter and sauces. Stir until combined, then remove from heat. Heat the pan over medium heat. Add oil and fry the pieces of bacon until crispy. Shuck oysters. Top each oyster with a tablespoon of sauce. Roast the oysters for 1-2 minutes or until the edges of the oyster meat begin to curl.

Pan-fried oysters
Serve 2-3
Preparation 10 minutes + cooking time
Ingredients
12 fresh oysters
6 tablespoons
normal flour
2 eggs; smoothie
1 cup panko (breadcrumbs)
3 tablespoons olive oil
Salt and pepper to taste
Method
Crush the oysters and place the oyster meat in a cilantro to drain. Set the oyster shells aside. Dry the oyster meat with a paper towel. Sprinkle oyster meat with flour. Dip the floured oyster meat in a bowl of beaten eggs. Top the floured oyster meat with breadcrumbs. Heat the pan over medium heat. Add oil and fry the oyster meat until golden brown on one side, then flip the oyster meat and do the same on the other side. Place fried oysters in oyster shells.
