Method

Discard the oysters and place the oyster meat and liquor (the clear, filtered seawater inside the half shell) in a bowl and place them in the fridge. Melt the butter in a small saucepan over medium heat. Add the milk and cream. When milk and cream are hot, add oyster meat and liquor, parsley, chili flakes, and salt and pepper. Stir until combined and hot for a few minutes, but don’t overcook the oysters. Spit out the soup in bowls and serve with slices of sourdough bread.

Pan-fried oysters

Serve 2-3

Preparation 10 minutes + cooking time

Ingredients

12 fresh oysters

6 tablespoons

normal flour

2 eggs; smoothie

1 cup panko (breadcrumbs)

3 tablespoons olive oil

Salt and pepper to taste

Method

Crush the oysters and place the oyster meat in a cilantro to drain. Set the oyster shells aside. Dry the oyster meat with a paper towel. Sprinkle oyster meat with flour. Dip the floured oyster meat in a bowl of beaten eggs. Top the floured oyster meat with breadcrumbs. Heat the pan over medium heat. Add oil and fry the oyster meat until golden brown on one side, then flip the oyster meat and do the same on the other side. Place fried oysters in oyster shells.
