- Chuck roast – My chuck roast weighed between 3 and 4 pounds. I estimate about half a pound of meat per person. When choosing a roast, cuts of meat can make a real difference in tenderness. Ask your butcher if you can’t find a roast of chuck.
- Pepper – I like to use freshly ground black pepper, but any kind of pepper will work.
- Salt – I normally cook with sea salt, but table salt will also work.
- Oil – My preference is extra virgin olive oil, but any type of oil will work.
- Onions – I used 2 medium onions that I cut into 1″ pieces. Any type of onion will work; white, Vidalia or even red.
- Celery – I used 2 celery ribs, diced. Celery is a must when roasted in a pot that really adds a pleasant flavor.
- Garlic – Chopped fresh garlic is best, but if you have garlic jars in your refrigerator, go ahead and use it.
- Tomato paste – Any type of canned tomato paste will work.
- Thyme – Fresh or dried thyme will work. Use 1 teaspoon of dry for every 1 tablespoon of fresh.
- Bay leaves – Bay leaves actually add a pleasant flavor, so don’t skip them.
- – Red wine adds depth to the flavor of the pot roast. Cooking sherry also works well. If you don’t have any of these on hand or prefer not to cook with alcohol, you can easily use meat broth instead.
- Meat broth – Store-bought beef broth works well in this recipe. I usually opt for low-sodium options.

- If you can’t find small red potatoes, you can use any potato and cut it into small pieces
- Parsnips – Parsnips add a pleasant sweetness to the roast. Cut them into 2″ pieces so that the pieces are pleasant and soft.
- Carrots – Carrots also add sweetness to roasting. I cut them into 2″ pieces like parsnips. Baby carrots will also work.
- Red wine vinegar adds some flavor to the cooking broth
- Parsley – Fresh parsley is better, but if it’s only dried, that’s fine.

How to make Bob Evans’ slow-cooked pot roast recipe

Preheat oven to 325 degrees F.

tie it at 2″ intervals
with the kitchen string.

In a Dutch oven over medium heat, heat the oil and add the roast. Brown on all sides and remove from the pot.
Add the onions, celery and the remaining 1/2 teaspoon of salt and cook over medium heat for about 8 minutes. Cook until onions are golden brown.
Add tomato paste, garlic, thyme and bay leaves, and cook for one minute

Pour the wine, stirring to loosen the small brown pieces from the bottom of the pan. Add the broth and stir.
Return the golden roast to the Dutch oven. Place the potatoes, carrots and parsnips around the roast and bring to a boil.
Transfer pot to bake and bake for 2-2 1/2 hours, or until roasting is tender. Remove the roast from the
pan and
cover to keep it warm

Discard the bay leaves from the pan and untie the fat from the liquid. Put the Dutch oven back on the stove once more and boil the cooking juices.
Cook for about 10 minutes, until the liquid is reduced by half. Add vinegar and parsley.
Cut the roast and assemble with vegetables on a serving plate and with the additional sauce on the side
