Breasts Chicken: I use boneless, skinless chicken breasts for this recipe, although boneless chicken thighs also work.

Bacon: It is important to use high-quality bacon, as it holds up best during the long cooking process. Avoid thickly cut bacon, as it is difficult to wrap around chicken and can turn out rubbery after cooking.

Brown sugar:

Brown sugar goes well with bacon, and the combination of the two creates a great flavor


Garlic: It is better to use fresh garlic, but garlic powder will also work.

CHICKEN BREASTS In a small bowl, combine brown sugar, minced garlic, salt and pepper. Then rub it all over all the chicken breasts.

Wrap each chicken breast with 2 to 3 strips of bacon. The amount of bacon depends on the size of your chicken and bacon. Try tucking the bacon under the chicken breasts and securing them with toothpicks if necessary. Make sure the bacon does not detangle during cooking.

After wrapping the chicken breasts with bacon, place them at the bottom of your clay pot in a single layer, curling them up as evenly as possible. I usually place 4 breasts in a 6-quart slow cooker. Sprinkle more brown sugar on top and put the lid on. Put the slow cooker over low heat and cook for about 3 hours. Keep in mind that you don’t need to add liquids, as it will release juices into the slow cooker while cooking.

When the chicken is well cooked, remove it from the slow cooker.

You can add vegetables during the last hour of cooking. My favorite choices include green beans, onions, and broccoli.

If you like crispy bacon, simply roast your chicken wrapped in bacon for about 2-3 minutes after cooking it in the clay pot. Just watch your chicken closely, as it can start burning pretty quickly.

I used boneless chicken breasts for this recipe. You can also use chicken thighs increasing the cooking time to 4-5 hours over low heat.
