One Pot Chicken and Rice – The Dinner Bite

This one-pot chicken and rice is about to be his family’s favorite. The skinless chicken thighs are tender and juicy and the rice is perfectly fluffy.

This is sure to be a winning weekday dinner that you and your family will enjoy. It’s simple, comforting and delicious! Serve with steamed carrots, broccoli or asparagus.

Who doesn’t love a good dinner from a pot? I do them all the time because they are super easy, convenient and quick to do. My family also enjoys this easy dish from a frying pan, more importantly, I’m glad my readers like it too.

Although the chicken and rice recipes on the blog were made in my instant cooker pressure cooker. I’m listening to my readers who haven’t yet joined the instant pot cart and show them how I make chicken and rice from a pan on the stove in easy steps. Today’s recipe is similar to my instant chicken and rice and I hope you enjoy it as much as we do.

This recipe is so good that you can make it your own. I love smoked paprika and add it to just about anything. Can I pretend it’s a kind of Spanish atmosphere? Just kidding, but really, if you’re not a fan of the spices used in today’s recipe, you can simply make it your own. That said, the flavors in this rice and chicken are AMAZING

Chicken and rice ingredients

Raw Basmati rice: change to jasmine rice or long grain rice. I used golden seal basmati rice that cooks like long grain rice.

Skinless chicken thighs with bone: I removed the skin from the chicken myself since we hardly eat chicken with skin. Also, to make this recipe healthy, it is best to cook without skin.

Mixed herbs: swap for Italian seasoning or Provence herb

Smoked paprika: sweet paprika

Olive oil: substitute with vegetable oil, coconut oil, avocado oil or any other cooking oil of your choice.

How to Make Chicken and Rice in a Pot in Easy Steps

For a small bowl, add smoked paprika, mixed herbs, garlic powder, onion powder, salt and black pepper and mix to combine. Rinse the rice until the water comes out clear and set aside.

Add the chicken thighs to a larger bowl and add the seasoning by reserving about a teaspoon for later. Mix until chicken is well covered.

Heat 2 tablespoons of olive oil over medium-high heat, carefully add the chicken, skin down and seal for about 3 minutes on each side until golden brown. Remove the chicken and place it on a plate and set aside. (You can dry the oil with a tea towel if you look too much at this point, as the chicken also releases its own oil.)

Sauté chopped onions in hot oil until soft, add rinsed rice and toast for a minute or two making sure it doesn’t stick to the bottom of the pan. Pour the chicken broth over the rice, the reserved seasoning and stir to combine. Deglaze the bottom of the pan while stirring by scraping the bottom of the pan. This way the rice is not burned when cooking.

Place the chicken thighs over the rice, then cover the pot with its lid and cook over low-medium heat for about 15 to 20 minutes, depending on the type of rice you are using. When the rice is ready, it would be tender, fluffy and the water would also be absorbed.

Garnish the rice with

chopped green onion, cover and let stand for another 3 minutes. Sponge the rice with a fork, serve and enjoy!

  • Squeeze some lemon or lime over

rice and chicken for a spicy flavor

  • You can add a handful of spinach or frozen vegetables 5 minutes until the end of cooking time for a healthier option.

Can I bake chicken and rice in the oven?

Absolutely, all you have to do is preheat the oven to 180C/350F. Follow all the steps above, but instead of cooking on the stove, bake in the covered oven for 50 minutes to 1 hour.
