Variations of the
recipe
Want to make this slow cooker chicken recipe your own? Here are some ways to change it.
- Add other vegetables. Feel free to add 1 cup of other vegetables. Either one of these or a combination: diced onion, diced celery, corn or peas, and frozen carrots.
- Use a different soup: Change chicken soup cream to mushroom soup cream or celery cream, if you prefer.
- Use chicken thighs. Chicken breasts can be replaced with boneless chicken thighs, as long as the total weight is the same. It does not change the other ingredients or the cooking time.
Can I use frozen chicken in the cooking pot? As a
rule, no and in this recipe, definitely not. If your chicken is frozen, you’ll need to thaw it completely before starting this recipe. Frozen chicken doesn’t cook properly in the slow cooker and can actually cause bacteria to grow as it doesn’t cook fast enough. Also, it may not cook completely or dry the other ingredients while waiting for it to cook. So definitely use completely thawed chicken for this recipe.

Tips for success
If this is your first time making slow-cooker and stuffed chicken, here are some things to help
.
- Add an extra chicken breast. If your chicken is on the smaller side, you can add an extra one as long as they all fit into one layer.
- Make the filling crispy. If you like the filling to be crunchier, remove the lid for the last 30 minutes of cooking. Alternatively, you can also put the pot in a 400-degree oven for 10-15 minutes to brown and firm the filling.
- Do not overcook chicken. Use an internal thermometer to see when it’s time to turn off the slow cooker. When you read 165F, your chicken is ready. Do not overcook it or it may dry out.
