Slow Cooker Chicken with Sweet Potatoes and Broccoli

The slow-cooked chicken with sweet potatoes and broccoli is perfectly easy to make, but it’s so deliciously satisfying! It includes many proteins and vitamins. A great meal any day of the week!
Fresh and tasty slow cooker chicken recipe with vegetables
This recipe makes a slow cooker full! As in once you add the broccoli, it will be almost full to the top. So it’s the perfect recipe for feeding a hungry family on a busy day.
And I love this combination of chicken sweet potatoes and broccoli. Not only a great flavor combo, but also a good color combo.
He seasoned the chicken and sweet potatoes with a sort of grill/Cajun style seasoning. So it has a lot of spices with a touch of sweet and spicy. But if you don’t make it spicy, just skip the cayenne pepper.
Then, if you have fresh thyme and/or rosemary on hand, you can definitely use them instead of the dry one like I used. I went with dry to save time, but fresh would do much better.

- Sweet potatoes
- Chicken broth
- Garlic
- pepper Condiments including paprika, brown sugar, onion powder, cayenne
- Herbs such as thyme, rosemary and optional fresh parsley
- Thighs
- Olive Oil
- Frozen Broccoli

How to Make
Slow-Cooker Chicken and Vegetables Spray the slow cooker
- with a nonstick cooking spray
- Place the sweet potatoes in a slow cooker, pour over the chicken broth, then sprinkle with half of the garlic and season with salt and pepper.
- Beat the paprika, brown sugar, onion powder, thyme, rosemary and cayenne pepper. Sprinkle half of the spice mixture evenly over the potatoes, setting aside the rest.
- Seal the chicken in 2 batches in olive oil in pot to the golden skin.
- Transfer to slow cooker. Repeat with the remaining 3 pieces of chicken.
- Sprinkle the remaining spice mixture and garlic evenly over the chicken.
- Simmer until the chicken registers 165.
- Add the broccoli for the last 30 minutes of cooking or steam in the bag as directed on the package.

And for simplicity, in addition to saving time, you can steam the broccoli in the microwave in the bag (as directed on the package) or, if you prefer, you can add them to the slow cooker near the end of cooking.
Just make sure they’re fully heated (for food safety, plus no one likes semi-thawed cold broccoli with a hot meal).
Can I use chicken breasts in this recipe?
- If preferred, boneless, skinless chicken breasts will also work. It just won’t be that tasty.
- If it does, I would skip the browning step because it will end up with dried chicken breasts if it does.
- And use smaller chicken breasts to cook for when the sweet potatoes are ready.
- Then, you’ll also want to add a few tablespoons of butter or olive oil to the slow cooker along with the broth, as you won’t get the fat from your chicken thighs.
