This chicken in red wine sauce is a tasty slow-cooked chicken dish similar to the French dish, Coq au Vin! It’s a great dish for special occasions as it can easily be the spectacle of your dining table. You can cook it slowly on the stove or let it cook in the oven. I have explained both steps.

The first time I tried cooking red chicken wine was probably 10 years ago and at that time, I didn’t even know the French dish, Coq au Vin.

I first learned the name when I cooked the same dish once again a few years ago for a friend.

My recipe for chicken in red wine sauce is very similar to the French Coq au Vin except for some minor changes.

I used Cakebread Cellers Merlot to prepare the chicken dish. The wine has a round aroma with blackberry and black cherry flavors and a balanced acidity.

While the chicken,

carrot and onion simmered in the wine and chicken broth, my whole kitchen smelled delicious and, as you can see in the picture, the dish turned out beautiful.

Steps to prepare chicken


  1. red wine sauce I used bone in chicken thigh that you can surely also replace with boneless. Start by marinating for a few hours in salt and pepper.
  2. With a little butter, brown the mushrooms into thin slices and then take it out of the pan.
  3. Now to the

  4. same pan add a little more butter and oil to seal the chicken pieces. Rub some flour on the chicken pieces and seal it in the hot pan to get the brown color in it. Take it off once done (we are not fully cooking the chicken here)
  5. To the same pan add a little more oil and cook the garlic, onion, along with salt, paprika. Then go the carrot and cook it for a while.
  6. Finally, pour the Cakebread Cellers Merlot wine, chicken broth and mix it all. Place the chicken pieces in layers and add a spring of rosemary or thyme.
  7. Lower the heat and let it simmer for 30 minutes or until the chicken is well cooked.
  8. Once the chicken is well cooked, add the golden mushrooms and mix.
  9. Enjoy the hot dish with a couple of glasses of the delicious Cakebread Cellers Merlot.

proceeding to step 5, place everything in one layer on an oven-proof dish and bake for 30 minutes in a preheated oven to 375 F.

The dish can be enjoyed with mashed potatoes, or rice or some crusty bread or just salad. The key to the dish is to use a good quality wine to get the best taste and flavor.

The dish may include some extra steps, but overall, I find it very easy to prepare the dish and the taste comes out robust with an incredible texture.
