Slow Cooker Chipotle Chicken – The Fig Jar
Make delicious chipotle chicken for the best chicken tacos right in the cooking pot!
I love this chicken! It’s juicy, full of smoky chipotle flavor and you just throw everything into a slow cooker and forget about it for four hours. This makes it ideal for summer tacos! It is not necessary to turn on the oven or stove for this chicken. But it’s really cool at any time of the year! The ingredients for this recipe are pretty simple, which is how I try to keep things around here. Let’s do it!

Becky Ingredients for Chipotle Chicken Slow Cooker
- Chicken Breast: As always, mine is butcher’s box! Organic, free-range and humanely raised chicken delivered straight to my door!
- (affiliate link): I love using chipotle adobo sauce in so many recipes. They give it smoky heat and add a delicious flavor to meat, chili peppers and make a killer chipotle mayonnaise. Just keep in mind: these can be quite spicy and spicy can vary from brand to brand. If you are sensitive to spices, you may want to use less.
- Onion: I like to cut the onion into thin slices to keep it in a shape similar to that of shredded chicken, but you can also chop it. I normally use yellow onion for this recipe, but you could really use any onion. Use what you have!
- Garlic: For the ultimate low-effort, recipe, I simply crush the teeth with the side of my knife to quickly remove the shell.

I am eternally grateful to Samin Nosrat, author of Salt, Fat, Acid, Heat (affiliate link) for teaching me how to never have dry chicken again. All you have to do is sprinkle salt on the chicken the night before you plan to cook, or even the morning of, and you’ll end up with tender chicken every time. Worth this extra step, trust me.
When making this chicken

I use the slow cooker setting on my instant cooker (affiliate link), which automatically sets a 4-hour cooking session by default. If you don’t have an instant cooker, place your slow cooker on the “high” setting and cook for 4 hours.
It is so easy to make this chicken. Just throw all the ingredients into your slow cooker (or instant cooker) and forget about it for 4 hours.

has finished cooking, use two forks to crush it, the chicken should be crushed very easily. It may seem like there’s a lot of liquid, but once you crush the chicken, it will absorb all that liquid, which means juicy, tasty chicken! A splash of lime, if you have it, is the perfect bright flavor to accompany smoked chipotle.

This chicken is perfect for tacos, which means it would also be wonderful in a burrito. Maybe on top of nachos or in a quesadilla. Even on top of a salad! Basically anywhere! Ooh sandwiches too!
A word of caution
Canned marinade chipotle can be quite spicy! If you are sensitive to spices, you may want to use half a can to begin with. I have also found that even certain brands can be spicier and the level of spices can even vary from can to can. If you plan on enjoying this chicken with cheese, rice with sour cream, and/or tortillas, that could also help tone down the spicy factor a bit.
