Slow Cooker Cilantro Lime Chicken Tacos – Belle of the Kitchen
These cilantro and lime chicken tacos are so delicious and easy to make! A five-ingredient meal that takes minutes to prepare and cooks all day in the slow cooker!
Since
autumn is in full swing, that means it’s crockpot season too
!
My favorite type of crockpot meals are the ones that require absolutely zero work other than throwing everything in the slow cooker (like Mississippi Pot Roast) and these cilantro and lime chicken tacos fit that bill, all of them!
Five ingredients, dump them and check them again in a few hours. You can’t beat that.
I served these cilantro and lime chicken tacos over some freshly made flour tortillas from H.E.B (the most amazing grocery store I’ve ever set foot in, by the way; God bless Texas!) Then he topped them with grated lettuce, diced tomatoes, a splash of ranch and even more cilantro.
Yes, I hope that if you are reading this post you are a fellow cilantro lover, because there is a lot of that in this recipe!

- Sprinkle the taco seasoning on top, then top with gravy, lemon juice, and cilantro.
- Place the lid on top and cook for four hours over high heat, or 6-7 hours over low heat. Remove the chicken from the slow cooker to a separate bowl and crumble with two forks. Moisten the chicken with small amounts of juice left over from the slow cooker until you get the amount of moisture you like. I used about 1/2 – 3/4 cup of juice.
- Serve with taco shells or tortillas, adding your favorite ingredients. I like to use grated lettuce, diced tomatoes, diced avocado, cheese, sour cream, and even a splash of ranchero dressing. Enjoy!

Tips and notes
How to make chicken with cilantro and lime in the Instant Pot
On super busy nights, or when I forget to put everything in the cooking pot on time, I like to do this in the instant pot. Add 1/2 cup of chicken broth or water to the bottom of your Instant Pot, then add the rest of the ingredients on top. Cook at high pressure for 10 minutes, then let the pressure release naturally for 10 minutes. Release any remaining pressure, remove the lid and crush the chicken as directed.
Can I wear chicken thighs?
yes! Chicken thighs work very well instead of chicken thighs. All instructions and cooking times remain the same for the thighs.
Can I use frozen chicken?
yes! You can use frozen chicken in the crockpot or Instant Pot version. You may need to increase the cooking time by about 1-2 hours in the slow cooker. For the instant cooker, cook at high pressure for 20 minutes with a natural release of 10 minutes before releasing any remaining pressure.
Is chicken with cilantro and lime gluten-free
?
Yes, just make sure you choose a gluten-free taco seasoning. Many of the types you can buy at the store are gluten-free, just check the labels. You can also make a homemade condiment for tacos.
Can I freeze Cilantro Lime Chicken?
yes! I like to make a large batch and freeze leftovers. Once your chicken is cold, add small portions to the individual ziplock bags and squeeze out the air. Place it flat and place it in the freezer for up to 3 months. Defrost in the refrigerator overnight and then reheat on the stove over low heat or in the microwave.
How to serve chicken with cilantro and lime
You can serve with hard or soft taco shells and sprinkle all your favorite ingredients! Pico, guacamole, cilantro, sour cream and cheese are some of our favorites.
You can also serve on rice to make chicken burrito bowls with cilantro and lime, or on mixed salads for a chicken salad with cilantro and lime!
