Logan is playing with a friend next door while Madeline enjoys her afternoon nap. That gives me a few minutes to tell you about one of my biggest food weaknesses: French fries and salsa!
And it’s not even so much the chips, although I quite enjoy On the Border Chips. It’s so much more about salsa for me, chips are just the vehicle through which sauce reaches my taste buds.
I
craved chips and gravy when I was pregnant with Logan. It was the only craving I had and an easy one to handle. I remember sometimes taking a spoon to the sauce jar to eat a bite or two because we didn’t have chips.
What I love about tomato and mango
sauce
I love making my own sauce! Last year I canned salsa, but I especially love a good fresh sauce.
I can’t wait for my tomato plants to be full of beautiful red, yellow and orange tomatoes waiting to become sauce
.
The tastiest salsa varieties are usually my favorite. I want the flavor of cilantro, onion and garlic to parade through the juicy tomatoes. I love that fresh taste.
But, I love that the
tomato and mango sauce recipe has all those features with the added bonus of juicy fruit for something different
.
A little sweet mixed with salty, without making the sauce itself taste too sweet. Yum!

Ingredient
substitutions
I usually don’t recommend making a bunch of substitutions when preparing a new recipe. When making substitutes, you won’t know if you don’t like the recipe or if the recipe didn’t work out because of a preparation error, a negative effect of the substitute, or something else.
However, if you choose to make substitutions in a recipe, I recommend that you only make one substitute at a time so that it does not have a constructing effect of multiple poor substitutions
.
Can I use frozen mango in this sauce recipe?
In my opinion, fresh ingredients are what make this recipe.
But, you can definitely substitute thawed, frozen mango if it’s not the right time of year to get ripe mangoes. Your batch of sauce won’t be as sweet or juicy, but it will still work.
Can I use a different type of onion?
sure! I love the way green onions taste in this recipe, but you can use chopped red onion, yellow onion, or white onion instead.
What other peppers work in this recipe?
I like to use jalapeños in this salsa recipe, but you can also try serrano peppers, poblano peppers, anaheim peppers, or roasted peppers instead.
If you don’t want the recipe to be spicy, try green peppers or red peppers.
