What is Barbacoa?
Barbacoa is an authentic Mexican dish typically made with beef, goat or lamb. It is traditionally seasoned with dried chilies and spices and cooked slowly until perfectly tender. From there it is used as a delicious filling for tacos, burritos and so on.

This is my favorite Beef BBQ recipe! I first shared the recipe in April 2015, but has since decided those photos needed an update.
It is an easy dish to make, nothing complicated and does not use hard-to-find ingredients. It’s incredibly tasty and you’ll love the glow of the lime.
Definitely a recipe easily worthy of your dinner rotation!

Ingredients for
barbecue beef roasting:
- This type of roast is best here with its fat marblining. It produces super tender results.
- Vegetable oil: used to brown the roast.
- Meat broth – chicken broth can be a substitute here if that’s what you have.
- Chipotle chilis – these add a tasty spicy touch. Freeze any remnants of the can for later use.
- Garlic – as always, I only recommend fresh garlic.
- Cumin, cloves, oregano, bay leaves: these spices and herbs add a delicious depth of flavor.
- Salt and pepper: season with a good amount of each so that it does not taste flat.
- Fresh lemon juice: Some barbecue recipes call for vinegar, but I like fresh lime much more here.
How to make
- beef with barbecue: Cut the roast into 6 servings while removing the large pieces of fat
- Golden portions: Heat the oil in a pan and seal the seasoned beef, half at a time, until golden brown on all sides.

Make
- chili paste: In a food processor, mix chipotle peppers, garlic, and 1/4 cup of beef broth until well mashed
- Make barbecue sauce: Beat the remaining meat broth with the mixture of chipotle, cumin, oregano, salt, pepper and cloves.
- Add the beef and mixtures to the slow cooker: pour the mixture over the meat in the slow cooker, add the bay leaves.

- Cook in low and slow Crockpot: Top and simmer 8 – 9 hours
- Shredded meat: Remove the beef from the slow cooker (leave broth) and crumble.
- Mix the lime and rest to soak the flavors: Stir the lemon juice in the broth in a slow cooker, then return the meat to the slow cooker and cook over low or hot heat for 20 to 30 more minutes.

Can I cook over high heat in the slow cooker
?
It is not recommended to cook at high temperatures here, the meat will not be so tender, so stay low and slow
.
How to make it smoother?
If you don’t want the chipotle pepper kick, just use 4 teaspoons of chili powder. Also, skip the food processor step, just chop garlic instead.
