Crockpot Elk Stew – A Ranch Mom
This hearty slow-cooker elk stew is the perfect hot meal for fall. This stew is full of healthy vegetables and lean elk meat, simmered in broth and herbs to create rich, complete flavors. This elk stew recipe is very versatile: I like how I can change vegetables and herbs to use whatever I have on hand.
Ingredients for Crockpot Elk Stew
The ingredients are fairly simple pantry items, although the list is long.

prepare the stew
Start with two pounds of diced elk meat. You can cut a roast or steaks into cubes, or if you have it, simply use elk stew meat. I usually only cube a few steaks.
Heat a skillet over medium-high heat and add a little olive oil. Add the moose stew and brown. You can do it in batches, to evenly brown all the cubes, but to save some time, I often just dump all the meat at once and stir it several times to brown most sides.
When the meat is all browned, put it in the cooking pot. Put the pan back on the burner and add 1 cup of meat broth to the hot pan. Stir and scrape the pieces of golden meat and simmer the broth. Remove from heat and pour the broth into the cooking pot with the meat.
Cut the onion and garlic into cubes, and add to the meat. Add seasonings, herbs, bay leaves, and diced tomatoes. Stir and turn the slow cooker to high. Cook over high heat for 2 hours*.
*Note: You can add all the ingredients at the beginning and let them cook for the entire cooking time. Cooking the meat first will help soften the hard elk meat without making the vegetables turn into porridge. But you can certainly put it all together, and it will be great.
After the moose stew has been cooked for 2 hours, add the potatoes, carrots, green beans, and jalapeño. Pour water and stir together. Cook over high heat for an additional 3 hours.

Can I put everything in the mechanical cooking pot at once?
Yes. You can put all the ingredients at the same time and let them cook together for 5 hours on high heat or 8 hours at low temperature. The vegetables will be softer, but still great!
How long to cook the moose stew in the cooking pot
? I cooked a total of 5 hours over high heat, but you can also cook it over low heat for 7-8 hours. Try not to open the lid more than necessary, as every time you lift the lid of a cooking pot, you can add an additional cooking time of 15-30 minutes.
