, is this sautéed spinach something to write at home! Let’s put it on the record: Alex and I love cooked spinach in recipes. But we didn’t think we liked sautéed spinach directly… Until now. This spinach is scented with garlic, wilted until bright green in some olive oil. It is topped with lemon juice to give it shine. The taste is fresh and vibrant, not lifeless and mushy as you would expect. This healthy side dish uses 3 large bunches of spinach, and Alex and I accidentally ate it all ourselves. It was that good.

Are you intrigued? What are the secrets of the best sautéed spinach? Well, some things that apparently cooks in the 1950s in America weren’t aware of. Even better: it only takes 10 minutes to do it! Here are all the secrets to making spinach taste amazing:

  • Cook it with whole garlic cloves. This infuses a subtle garlic flavor throughout, without being too overwhelming. It also minimizes the risk of browning or burning garlic.
  • Don’t overcook it! Cook until withered. So many sautéed spinach recipes overcook it until it’s flabby and lifeless. Don’t make that mistake too! Get it out of the heat when it is withered and still a beautiful green color.
  • Add a squeeze of lemon at the end. Adding a touch of fresh lemon juice adds brightness to the flavor. Use only real lemon juice (none of those bottled things).
  • Salt perfectly. Many sautéed spinach recipes are too tasteless. Add that salt! Spinach absorbs so much that you won’t need much. Salt until the flavor pops out, but not so much that it tastes salty. (Keep trying to get it right!)

Alex and I accidentally ate this recipe just the two of us in one go! So it’s a great way to eat spinach without even realizing it.
