Here is the best sautéed spinach recipe, guaranteed to make eating your vegetables taste amazing! Even better, it only takes 10 minutes to prepare.

Sautéed spinachWow

, is this sautéed spinach something to write at home! Let’s put it on the record: Alex and I love cooked spinach in recipes. But we didn’t think we liked sautéed spinach directly… Until now. This spinach is scented with garlic, wilted until bright green in some olive oil. It is topped with lemon juice to give it shine. The taste is fresh and vibrant, not lifeless and mushy as you would expect. This healthy side dish uses 3 large bunches of spinach, and Alex and I accidentally ate it all ourselves. It was that good.

How to make sautéed spinach taste good (really!)

Are you intrigued? What are the secrets of the best sautéed spinach? Well, some things that apparently cooks in the 1950s in America weren’t aware of. Even better: it only takes 10 minutes to do it! Here are all the secrets to making spinach taste amazing:

  • Cook it with whole garlic cloves. This infuses a subtle garlic flavor throughout, without being too overwhelming. It also minimizes the risk of browning or burning garlic.
  • Don’t overcook it! Cook until withered. So many sautéed spinach recipes overcook it until it’s flabby and lifeless. Don’t make that mistake too! Get it out of the heat when it is withered and still a beautiful green color.
  • Add a squeeze of lemon at the end. Adding a touch of fresh lemon juice adds brightness to the flavor. Use only real lemon juice (none of those bottled things).
  • Salt perfectly. Many sautéed spinach recipes are too tasteless. Add that salt! Spinach absorbs so much that you won’t need much. Salt until the flavor pops out, but not so much that it tastes salty. (Keep trying to get it right!)

If you want to eat more spinach, this is the recipe for you.

really! This sautéed spinach comes out so tasty that you’ll find yourself sneaking more of it onto your plate. (Well, we did.) One interesting thing about spinach: its fresh volume seems very large, but when sautéed it wilts in almost nothing.

When you see 3 large bunches of spinach, you will swear that there is no way you can eat them. And you couldn’t if they were fresh. But sauté it with olive oil and it loses most of its volume. Alex and I accidentally ate this recipe just the two of us in one go! So it’s a great way to eat spinach without even realizing it. This easy plant-based side dish is so delicious that even your father could overcome his childhood phobia. (I hope mine does.)

a topping!

Is it better to use clusters of spinach or baby spinach leaves?

Good question! Either works. Spinach in clusters really works great here! This is what we use, and it’s the perfect way to use spinach in bunches. Because you’re cooking it and adding flavor, it’s not as “in your face” as it could be in a salad. But baby spinach leaves or spinach that come as leaves in a box also work!

A note on sustainability: Alex and I love the convenience of buying pre-washed spinach in plastic boxes at the grocery store. But because we’re working to minimize our consumption of single-use plastic, we’ve been trying to buy more vegetables in bunches lately. Yes, it takes a little longer to wash and prepare – but it’s worth it in the long run.
