There is a recipe circulating on the Internet called “crack chicken.” It’s usually made in the slow cooker or Instant Pot and has chicken, bacon, cream cheese, cheddar, and ranch dressing mix.
Sounds good? It is. It’s terribly good. But if you’re looking to add a little more nutrition and push to crack chicken, then you should make my Instant Pot crack chicken chili. It has all the ingredients of regular crack chicken, but it also has beans, tomatoes, green chili peppers, and seasonings added. And I’ll tell you something, it was so good that all my family plus a friend couldn’t stop eating it. We ate it until it disappeared. YUM! We all agreed that the taste was perfect. I’m looking for a reason to make this a reality soon.
A couple of ingredient notes
:
Cream cheese: I used whole cream cheese. And guess what? I added it at the beginning of the recipe. She was a little nervous that she wouldn’t stay under pressure (dairy usually does NOT), but she did! It was quick and easy and incorporated very well after stirring and thickening with the cornstarch suspension.
Corn: I used frozen sweet corn and it was one of my favorite parts of chili. Small touches of sweetness in every bite. Canned corn would also work, although I personally don’t think it tastes that good.
Chili Beans-Chili beans are located next to regular canned beans at the grocery store. Some common brands that sell chili peppers are Bush’s and S&W. Chili peppers are pinto beans that are canned in tomato sauce and have seasonings added. I found that using these beans gave chili an extra boost of flavor.
Bacon Crumbles: I like to buy Costco’s big bag of bacon crumbles. They are very convenient. You can cook bacon and crumble it, if you prefer.

Which pressure cooker did you use?
To make Instant Pot Crack Chicken Chili I used my Instant Pot Duo 60 7 in 1 * 6 quarts. I love this Instant Pot because it has the function of making yogurt that I use almost weekly. It has two pressure settings (high and low), and there are also small grooves in the handles so you can rest the lid there instead of placing it on your countertop.
