family loves the pot roast. It’s such a delicious comfort food. Since I stay home with our four kids, slow cooker recipes that I can start in the morning and forget about the rest of the day make dinner easy. Our favorite keto slow cooker recipe has always been a delicious and easy pot roast. When we started eating keto, I decided to adapt the traditional Mississippi Pot Roast to make it more ketogenic. WHY IS IT CALLED MISSISSIPPI-STYLE POT ROAST?
According to Google, the
original recipe came out of Ripley, Mississippi, in the 1990s by Robin Chapman, who was looking to make a recipe his aunt would make milder. HOW IS MISSISSIPPI POST-ROAST DIFFERENT FROM REGULAR POT ROAST?
This Keto Mississippi pot roast recipe is naturally low in carbs since there are no potatoes or carrots. The stars of the show that set it apart from the rest are a butter bar, a mix of ranchero dressing and pepperoncini peppers. The traditional recipe also calls for a package of sauce mix, but I skipped it for a ketogenic version. If you’re strict keto and prefer not to use a package of ranch dressing mix, there are plenty of recipes on Pinterest for homemade ranch dressing mix.
IS KETO MISSISSIPPI POT ROAST SPICY?
No! I’m a total coward when it comes to spicy foods. This recipe is mild. My toddlers even love it.
IS IT NECESSARY TO SEAL THE POT ROAST BEFORE COOKING SLOWLY?
I used to seal the roast first in a cast iron pan, but I skipped once due to time constraints, and I couldn’t tell the difference at all. The roast was still just as tasty and tender, so now I don’t bother to burn it anymore. It saves time and there is less clutter in my kitchen.
HOW LONG TO COOK THE CLAY POT ROAST RECIPE?
Although sometimes cooking times can vary depending on the size and shape of the roast, generally, you will cook over high heat for 4-5 hours or low for 9-10 hours. If you find that the pot roast in the Crock-Pot is not tender after the allotted cooking time, it should be cooked longer. Go ahead and crush the roast if it’s tender enough to crush, then continue to cook slowly over high heat for an hour or so. If it is not tender enough to crush, continue to cook slowly for at least an hour over high heat without removing the lid. HOW TO THICKEN THE SAUCE?
Most who follow a keto or low-carb recipe avoid cornstarch and regular flours, which are often used to thicken the sauce in pot roasts. A ketogenic alternative is xanthan gum. Only use a small amount and let it sit on the food for five to ten minutes so that it has time to thicken. I always start with 1/4 to 1/2 teaspoon to start, then add more if necessary. If you use too much, the food will have a viscous texture.

TIPS FOR THE BEST KETO ROAST POT:
- Chuck Roast, as it will be the most tender and tasty when cooked slowly
- Use meat broth instead of water for a nice, bold taste
- While I always omit to burn a pot roast to save time, experts say that singling is best. Personally, when trying it both ways, I can’t tell the difference.
- If the pot roast seems hard, it will likely need to be cooked slowly for longer. Close the lid and check again in an hour or so.
