Easy Lamb Shoulder in the Slow Cooker – Herb Garlic Roast
This easy lamb roast recipe with slow cooker of herbs and garlic is the perfect meal for holidays or special Sunday dinner. Herbs and garlic add a lot of flavor to both roast lamb and vegetables. And when this roast is done in the slow cooker or slow cooker, it frees up time for you to spend time with your loved ones.

I
must confess that I am not a great lover of lamb. I love it when cooked on a spit but not in chewy lamb chops. That’s why I made this lamb roast in a slow cooker or clay pot. It reminds me of how my grandmother used to make barbecues.
She studded the meat with garlic and herbs and cooked them all day until they were tender. So that’s why I made this herb slow cooker lamb roast and garlic like her. It is studded with garlic, rubbed with herbs and cooked all day in the slow cooker until tender and delicious.
I also like to make pork and beef roasts like this one. One of my favorite recipes is this pork roast with garlic that we eat all the time. It is a less expensive meat to make and we use it for burritos, tacos and quesadillas.
However, lamb is something special and reminds me of holidays or special occasions. So when I saw that Aldi has lamb’s leg I had to try it. And slow cooker recipes are the easiest dinners to make.
Preparing the lamb roast and the ingredients I used.
For this recipe the ingredients I used were garlic cloves, olive oil, salt, black pepper, oregano and rosemary leaves to season the meat. This only takes a few minutes to do.
Keep in mind that I used dried herbs and not fresh. If you use fresh herbs, the general rule is 1 tablespoon of fresh herbs equal to 1 teaspoon of dried ones.

herbs and olive oil are used to make a paste that is rubbed all over the meat. Please note that I do not use any liquids such as meat broth or broth. Roast and vegetables will produce enough liquid.
You can roast potatoes, carrots, celery and onions along with meat for a full meal. Be sure to place the vegetables in the slow cooker first and then roast.
How to cook a roast lamb in the slow cooker
This is a fairly easy recipe. Just a few steps and a couple of minutes to get it up and running in the morning and it will be done for you in the evening for dinner.
Note that you can take an extra step to seal the roast in a cast iron skillet over medium-high heat for 2-3 minutes on each side. However, I think it is not necessary.
Take 5 cloves of garlic and cut
- them into thin slices
- Then cut small indentations all over the roast and stuff the garlic chips into the holes
- Make a paste of herbs, spices and olive oil and rub the herb mixture all over the boneless leg of lamb
- You can add any kind of fresh vegetables you want to your slow cooker. Season with salt and then let the roast rest on top. I used potatoes, carrots, celery and onions.
- Simmer all day (about 8 hours) in the slow cooker for a tender, tasty roasted dinner. Or you can cook it over high heat and it will be done in about 5 hours. Cooking times may vary depending on the size of your roast.
- Place in a dish and surround with roasted potatoes and other vegetables. Cover with aluminum foil until ready to eat.

The internal temperature should be 145 ° when using a meat thermometer to make it medium. If you want to use a side dish, try some fresh herbs like sprigs of rosemary or fresh thyme.

Which cuts of lamb work best in the slow cooker? I wouldn’t make a rib of lamb or chops
in the slow cooker
. They are more tender than other cuts and are usually more expensive. What I did use was a leg of lamb and sometimes a lamb shoulder roast. It takes a while to get tender, so this makes it the perfect cut for a slow cooker.

What to serve with this recipe.
If you’re using vegetables in the slow cooker along with the meat, you’d just need a good green salad for a full meal. However, my suggestions for something a little more festive. Try this recipe for pomegranate and quinoa, potatoes and Brussels sprouts with bacon or asparagus wrapped with goat cheese. They are all easy and make a delicious accompaniment.
