Wet and delicious, 2 Ingredient Slow Cooker Roast Lamb is prepared in seconds. You won’t want to roast a leg of lamb any other way once you’ve tried this easy slow cook roast!
Today I’m sharing my stupidly easy plus completely moist and delicious 2-ingredient slow cook roast lamb.
As we approach summer and expect hot days, I really don’t want to spend a lot of time cooking or turning on the oven in an already hot stove. Last Sunday was a sweltering day and I had a virus. The last thing I wanted to do was cook or wash a lot of greasy, burnt pans, but I had half a leg of lamb that I needed to cook.
So instead of roasting it in the oven along with the potatoes, I decided that a less dirty and fresher solution would be to roast my half leg of lamb in the slow cooker and make ActiFry roast potatoes. So all I had to do was boil/steam some vegetables and make some sauce.
In the past I have made cuts in the lamb joint and inserted garlic and fresh rosemary
.
However, this was really one of those days when even the slightest was a great effort. So, I decided that my husband’s idea of simply drizzling a bucket of lamb broth to improve the taste a bit sounded like a fabulous idea.
If you have a cook’s syringe or one of those fancy jugs that separates fat from meat juices, you can add the juices to your sauce for a big flavor boost.
We were all
in food heaven eating our Sunday roast lamb, the meat was very tender and falling out of the bone and the bouillon bucket really improved the taste of
the lamb. I
was so happy I didn’t spoil my oven with all the lamb fat and there were no cumbersome roasting cans to wash.
So summer or winter I will definitely use the slow cooker to roast all my Lamb joints from now on and it is also very energy efficient.
