Instant Pot Lamb Shoulder Roast Greek-Style

This succulent Instant Pot lamb shoulder roast that melts in the mouth only takes a little over an hour instead of 4-5 hours of slow cooking in the oven. Ideal for Easter, Thanksgiving or your weekly barbecue dinner on Sundays.
One of our favorite things about Instant Pot is that you can make time-consuming dishes, like slow-roasted meats, in a fraction of the time. Roasting the shoulder of lamb in the oven until it is soft and tender can take 4 to 5 hours, but if you cook it in the instant pot first, you can reduce that time to 1 hour of total cooking time.
In this Instant Pot lamb roast recipe, we are inspired by Greek cuisine. The meat is flavored with fresh thyme, garlic and honey and cooked for 40 minutes in the instant pot (with 10 minutes of natural pressure release) followed by a quick 10-minute finish in a hot oven.
We serve it topped with fresh parsley, lemon rind and pomegranate to cut the richness of the meat and make it look a little more festive. It is ideal for a family reunion, especially Easter, Thanksgiving or Christmas.
HOW TO MAKE INSTANT LAMB ROAST
STEP 1. For this recipe, we are using lamb shoulder without joint/bone. This cut often comes rolled up and tied with a butcher’s string, and in this case, we want to carefully remove the rope to season and flavor the lamb meat generously with the herbs, garlic, honey, salt and pepper.

STEP 2. Then we use the same rope to roll and secure the meat again. If you are using a different cut of lamb, for example, lamb leg meat or lamb shoulder with a joint, you can make some cuts in the meat and stuff them with the herbs and garlic instead.
You could also use beef breast or cuts of beef for roasting instead of lamb, as could something like pork shoulder or a whole chicken. This Greek combination of herbs, garlic and honey works with white and red meat alike.
STEP 3. To cook the meat, add some garlic and thyme to a cup of water in the Instant Pot and then place the roast lamb in the water. You can also place it on top of a trivet or on a heat-proof plate (depends on the cut or shape you’re using).
STEP 4. Once the meat is cooked in the Instant Pot, it is transferred to the oven for 10 minutes so that it browns lightly. Super simple! The full recipe and ingredients can be found below. We hope you enjoy this dish!
WHAT TO DO WITH LEFTOVER ROAST LAMB?
Often, you’ll have some leftover roast lamb. It can be saved for lunch the next day and incorporated into other dishes. You can use the Instant Pot rice pilaf. Throw diced lamb with onions, garlic and canned tomatoes for a hearty instant pasta dish. Or, use it in fried rice, hashish for breakfast, sandwiches and wraps, or to cover salads.
