Leftover Chicken and Egg Fried Rice – Easy Peasy Foodie
An easy, quick and family-friendly meal, Leftover Chicken and Egg Fried Rice is perfect for a busy weeknight and a great way to use your roast chicken leftovers… No chicken leftovers? No problem. Read on to find out how to “create” some leftovers…
Hands up Who likes a good roast chicken dinner? Me, me, me!! It’s definitely one of my favorites… Especially my latest favorite Greek roast chicken or my ever-popular classic roast chicken with homemade sauce.
But inevitably with a roast chicken there are always some leftovers (especially if you’re like me and deliberately create some leftovers!) and then there’s the dilemma of what to do with it.
Of course, you can make chicken sandwiches or eat cold meat and salad… But if you want to try something a little more interesting, why not try my leftover chicken and egg fried rice?
This recipe makes good use of leftovers, turning them into a very easy and family dinner from Monday to Friday.
Plus, when
using a packet of prepared rice and easy veggies (almost no snacks!), it’s also quick: this recipe lasts only 15 minutes from start to finish, perfect for when time is tight, But they still want to eat well.
No chicken leftovers? No problem: simply fry two chicken breasts for about 6-7 minutes on each side over medium heat, let stand for 5 minutes, crush with a couple of forks and then continue with the recipe below.
To make this meal a little healthier I have used brown rice, but it will work just as well if you use white rice

I’ve used precooked rice to make this dish really quick and easy, but if you prefer to cook your own rice, do it first: you’ll need about 170g of raw rice to produce 500g of cooked rice.
When you have cooked your rice, you need to cool it first before starting this recipe – hot rice will not work so well! I find that the quickest way to do this is to drain my cooked rice in a colander and then run the cold tap over it until it’s cold.
Finally I let it rest on the pan in which it was cooked until it has dried a little. Alternatively, let your rice cool to room temperature, then put it in a plastic box in the refrigerator until you need it.
This recipe will also work very well with leftover pork, ham, bacon or precooked prawns. Alternatively, to make a vegetarian version, you can use tofu or Quorn chicken pieces. This recipe is naturally dairy-free and if you make sure to use gluten-free soy sauce (tamari), it’s also gluten-free.
