We all know the saying “you only live once” right? Well, last week we lived up to that exact phrase! My husband and I went out for dinner on Friday night around 8pm and mentioned that a co-worker was heading north to ski for one last weekend.

This has just been St. Patrick’s Day weekend, a weekend in Michigan that normally does NOT have good skiing conditions, however, we have been having unusually cold weather here.

So what better way to embrace the weather than to head north for skiing?

I’m pretty sure our kids think we’re crazy, along with my parents who were taking care of our kids that night.

We decided to return home from the evening at 9pm, pack as fast as possible and drive 4 hours north to Boyne Highlands.

We arrived at 2am and were ready to ski at 9am the next morning.

So what was the last thing I thought of when I came home after this crowded weekend? Dinner, of course.

That’s why recipes like this recipe from Slow Cooker Mediterranean Pork Roast Quinoa Bowl, using a fresh boneless pork tenderloin from Smithfield, are essential to have on hand.

And in the

past, I’ve mentioned that I’d never put a recipe in the slow cooker before work, until now! I had the red onions pre-chopped and even put the massage together the night before.

So before I left for work

, I just had to rub the roast and add it to the slow cooker before I left for work. It’s that simple!
