My FAVORITE thing to do with freshly harvested strawberries is this simple strawberry cream cheesecake, it’s the best way to start strawberry season, but having a great unbaked cake in my collection is also essential for hot summer days!

This easy cake has two simple parts, the crust and the filling (and, of course, whipped cream to serve).

a Graham cookie crust:
A homemade Graham Graham bark is thicker and holds up better than a store-bought bark.
- Combine graham cookie crumbs, sugar, and butter in a bowl until moistened
- Press the graham cookie crust into a standard 9-inch cake plate to cover the bottom and up of the sides
- Refrigerate to curdle.

How to make strawberry cake filling:
Puree
- strawberries in a food processor or blender
- Heat the puree with the remaining ingredients except Jell-o (be sure to stir constantly).
- Remove from heat and add the gelatin. Allow to cool to room temperature. Stir the remaining strawberries in the frosting to cover completely.
- Fill the cake and refrigerate for 4 hours.

Once cooled serve with whipped cream, if desired.
You can make this strawberry cake easy with frozen strawberries (but fresh is better)! Strawberries won’t be as firm if you use them frozen and the cake may cry a little after a day or so. In a pinch, frozen berries will work.
This cake filling is easy to make, sets up wonderfully, and tastes like summer!
