If I had to name an evil nemesis living in my kitchen, it would probably be pork chops. Are you looking for inedible shoe leather ALWAYS??? Yes, that’s the relationship I’ve had with pork chops since I learned to cook and that’s why I always walked past them at the grocery store. But my husband l-o-v-e-s pork chops, so I knew I had to find a way to cook them without all of us breaking our teeth trying to eat them. Then I learned a couple of tricks and now we have slow cooking pork chops with sauce.

This is also Porkchop and can be just as difficult at times (#toddlerfromhell)… He likes to steal whole chocolate cakes from the kitchen counter and has even sneaked away with a whole smoked pork roast once. Thanks to him, I have learned to block food as a pro 🙂

Then I swing to the other side and, in an attempt not to overcook them, they are too pink and scary. Then we return to the overcooked side. Around and around and around, let’s go! Soaking pork in brine definitely helps, but sometimes you get home late from work or picking up the kids and don’t have the time/energy/ambition to brine your chops for five minutes, let alone an hour. The best type of pork chops for slow cooking are thickly cut pork chops. Thickly cut pork chops are usually about 2 inches thick. They have plenty of meat to absorb that delicious cooking sauce and because they are not thin, they can withstand the longest cooking time.

Stew is simply a cooking method that involves browning the meat in oil, then cooking the meat in a pan well covered with liquid. The long, slow cooking time helps develop a rich flavor and makes harder cuts of meat tender. The stew helps make slow-cooked pork chops with sauce super tender.

HOW DO YOU MAKE SLOW COOKER PORK CHOPS WITH SAUCE?

In a large skillet, heat the olive oil and butter over medium-high heat. Dredge the pork chops in the flour mixture and when the oil/butter heats up, seal the pork chops for 2-3 minutes on each side.

Pour the chicken broth and bring to a low boil, beat continuously. Add the spices and cook the sherry and bata to combine. Add the onions over the pork chops and pour the sauce into the slow cooker and make sure they are all topped. Cover and cook low for 8 hours or high for 4 hours.

Pour the sauce into the pan in the oven, heated to medium/medium high (I used a measuring cup to transfer the liquid instead of trying to lift the slow cooker). Reserve a cup of salsa and add the cornstarch. Beat to combine in a suspension.

Pour the suspension into the pan sauce and add the cream.. robe to combine. Bring to a low boil and check for seasonings. Add salt and pepper as needed. Ladle of sauce over pork chops when served and garnish with fresh parsley.
