This simple pork stew is a delicious alternative to a Sunday roast and because it’s cooked in the slow cooker, it’s a nice and easy recipe, meaning you can have a nice lazy Sunday.
You can throw all the ingredients into the slow cooker in less than 10 minutes and then go home with a delicious heating casserole.
The pork cider casserole is perfect served with mashed mustard marbled potatoes or thick slices of crusty bread covered in butter to dip into the juices. Pork and apple are a delicious combination.

we use a slow cooker where the inner pan is safe to use on the countertop and cooker. If you don’t have a slow cooker safe for slow cooking, use a pan to cook any plate and then transfer it to the slow cooker for slow cooking.
Ingredients of pork and cider
casserole
You’ll only need a handful of simple ingredients to make our delicious slow-cooking pork casserole recipe
.
- 500g diced lean pork – Choose lean pork and trim any visible fat.
- 300 g baby carrots – these little carrots They are delicious in stew – just cover them and give them an exfoliant.
- 1 onion – choose a medium onion – then peel and dice

- celery sticks – finely chopped
- 250ml apple cider – I always use Westons Cider in my casserole, it tastes so lovely that it works great with pork.
- 150 ml chicken broth
- 2 teaspoons dried thyme – You can use fresh collected thyme leaves if you prefer, you will probably need some sprigs.
- 2 teaspoons cornmeal and a drop of water (to thicken the sauce once cooked)
Equipment needed to make pork and apple cider
- Casserole Cutting board
- Vegetable knife
- Measuring jug
- Teaspoon
- Slow cooker (you can cook this in the oven – we’ll show you how further down the page – I have a Crockpot Sauté slow cooker so I can remove the slow cooker and use it on the countertop to get things started)
How to Make Pork and Cider Casserole
Our slow-cooking pork and cider casserole is super easy to make
.
All you need to do is combine all the ingredients: bring it to a boil, transfer it to the slow cooker and let it simmer for about 8 hours to cook.
Step One: Prepare the Vegetables
- Peel and chop the onions
- Cut the celery sticks
- Rub the baby carrots and cut the fat ones in half
.
Step Two: Load the Slow Cooker
with the Delicious Ingredients Add a splash of sunflower oil to the
- slow cooker and wipe it around the pan with a piece of kitchen roll to oil the sides

- cooker Sprinkle the dried thyme in the slow cooker over the top of the pork cider casserole ingredients.
- Season to your preference with sea salt and cracked black pepper.
- Mix the ingredients of the pork casserole and cider along with a wooden spoon.
Step
Three: Boil the Casserole Cooks’ note
: If your slow cooker can’t be used on a countertop, first heat the casserole in a safe cooking pan and transfer it to the slow cooker for cooking.
- Bring the casserole to a boil on the countertop, then transfer it to the slow cooker and simmer for about 8 hours.
Step Four: thicken

- Once cooked if the cider sauce needs to thicken, do so by adding 2 teaspoons of cornmeal to a cup, mixing with a drop of water to form a paste and stirring through the casserole, cooking until the sauce thickens.

- If you want more vegetables or need the stew stretched to feed more people, add a can of diced butter or pepper beans.
- Fancy a little spice? Add a teaspoon of cinnamon, teaspoon of cumin and teaspoon of red chili flakes.

- To make mashed potatoes faster, simply cut the potatoes into small pieces before boiling, this reduces cooking time by about 15 minutes. This casserole is perfect served with our mustard puree!

Can I freeze the pork and cider casserole?
Yes, you can freeze the pork cider casserole. Cool the casserole completely, then store it in an airtight, freeze-proof container or freezer bag in the freezer.
The casserole should keep well for up to 3 months.
When thawing the casserole for use, do so safely and make sure it fully reheats to a minimum of 75°C at all times.
What can I do with the leftover casserole?
If you have any casserole left over you can cool it properly and store it in the fridge and use it the next day.
