Simply place your ingredients in the pot in the morning, close the lid and set the timer. Within hours, you have a full hot meal that’s ready to enjoy. Easy-peasy!
Pork is a protein that is particularly good to make in the clay pot. Other methods, such as grilling and roasting, can be time-consuming or difficult to cook pork that is undercooked or overcooked. For today’s recipe, I wanted to create a simple and satisfying slow cooker meal that uses my favorite cut of pork, the loin, combined with bold southern flavors. This pork loin with apples and onions is incredibly easy, but it tastes wonderfully complex and comforting. It includes a fantastic hint of spices that you’ll want to use in everything, and the whole dish has a great balance of sweet and savory flavors.

I love the Southern combination of pork with green apples and onions. Who else grew up eating pork chops and applesauce as a regular dinner staple? Our recipe is inspired by this childhood favorite, but it’s much tastier and easier to make using the clay pot.
Onions sautéed with tender granny smith apples add a perfectly acidic and sweet and juicy flavor to pork loin. Even picky eaters will enjoy this dish!

What ingredients do you need
This slow-cooking pork loin recipe with onions and apples requires only a handful of simple, healthy ingredients. These are staples of Southern cuisine, but they are available in most supermarkets across the country.
Here’s everything you need:
- Pork loin – one small or two large
- Condiments – salt, cinnamon, garlic powder, ground cumin and dried mustard
- Butter – a cornerstone of almost any southern dish
- Onions – white or yellow
- Granny Smith apples – for the best spicy taste
- Brown sugar – to sweeten the acidity of
- Parsley – to serve
How to make pork loin with apples and onions in the slow cooker
Preparation for this dish is super easy, and it’s great to make in the morning before you leave the house or enjoy a relaxing day at home.
First, rub the seasoning. (You can do this overnight or a day or two before making the loin.) In a small bowl, mix salt, cinnamon and garlic powder, cumin and dried mustard. Rub generously over the entire surface of the pork loin.
Then, place a large skillet over medium-high heat and add the butter. Once hot, place the pork loin in the pan and seal it on all sides to seal the juices. This will take about 10 minutes.
Move the pork loin to a plate and add the sliced onions to the hot pan. Sauté the onions for a couple of minutes to soften.
Next, cover the bottom of a large 6-quart pot with the apple slices and sprinkle the brown sugar evenly over the apples. Pour the sautéed onions and sprinkle with salt. Place the charred pork loin over the tops of raw apples and cooked onions.
Cover the clay pot and turn it on low for 6-8 hours, or high for 2-4 hours. Once the apples are tender, dinner is ready! Turn off the slow cooker and remove pork, apples, and onions immediately to prevent apples from continuing to cook and become soft.
Cut the loin into slices and place in a dish, surrounded by apples and onions. Sprinkle with chopped parsley and serve hot.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Apples and onions may become softer once they are reheated, but they will still taste delicious!

What other apples can I use to make pork loin with apples and onions?
This slow cooker pork loin recipe uses Granny Smith apples, but feel free to use other apples you have available. Sweet apples like Golden Delicious and Honeycrisp won’t be as wonderfully sour as Granny Smiths, but they will have great sweetness and flavor.
Just be sure to select a firm apple variety.
