How to make pork loin with apples and onions in the slow cooker

Preparation for this dish is super easy, and it’s great to make in the morning before you leave the house or enjoy a relaxing day at home.

First, rub the seasoning. (You can do this overnight or a day or two before making the loin.) In a small bowl, mix salt, cinnamon and garlic powder, cumin and dried mustard. Rub generously over the entire surface of the pork loin.

Then, place a large skillet over medium-high heat and add the butter. Once hot, place the pork loin in the pan and seal it on all sides to seal the juices. This will take about 10 minutes.

Move the pork loin to a plate and add the sliced onions to the hot pan. Sauté the onions for a couple of minutes to soften.

Next, cover the bottom of a large 6-quart pot with the apple slices and sprinkle the brown sugar evenly over the apples. Pour the sautéed onions and sprinkle with salt. Place the charred pork loin over the tops of raw apples and cooked onions.

Cover the clay pot and turn it on low for 6-8 hours, or high for 2-4 hours. Once the apples are tender, dinner is ready! Turn off the slow cooker and remove pork, apples, and onions immediately to prevent apples from continuing to cook and become soft.

Cut the loin into slices and place in a dish, surrounded by apples and onions. Sprinkle with chopped parsley and serve hot.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Apples and onions may become softer once they are reheated, but they will still taste delicious!
