I took my amazing classic meat stew recipe (<< seriously the best meat stew ever

, DO IT!), adjusted several ingredients and turned it into the clay pot and this slow cooker meat stew was born. It’s so delicious!

That’s saying a lot, since I’m not a big lover of clay pots. But this recipe is great: the vegetables are tender, but not soft and the taste is totally there. It’s not tasteless at all, as many slow cooker recipes tend to be. Whomp whomp.

Slow Cooker Beef Stew Ingredients

Here’s what you’ll need!

  • Meat – beef chuck roast
  • Vegetables – new potatoes babies, carrots, peas, onion and garlic
  • Condiments – thyme, oregano, smoked paprika, mustard seeds, bay leaves, fresh parsley, salt and pepper
  • Liquids: low-sodium meat broth, vegetable juice (such as V8), Worcestershire sauce and tomato paste
  • Other – extra virgin olive oil to sauté meat and flour (or cornstarch) to thicken the sauce

How to make meat

It is very easy to make this meat stew clay pot recipe! Here is a brief summary of the steps. (Scroll down to see the detailed printable.)

  1. Heat the olive oil in a large skillet
  2. .

  3. Season the beef with salt and pepper, add to the pan and brown all
  4. over.

  5. Place beef, potatoes, carrots, onions, and garlic in a 6-quart greased slow cooker
  6. .

  7. Beat liquids and seasonings together until well combined; pour over beef and vegetables.
  8. Add the leaves of bay leaf and season with salt and pepper.
  9. Cover and simmer until the meat is super tender and melts to the touch.
  10. For the last 5 minutes, add the peas.
  11. Discard the bay leaves and thyme twig.
  12. Serve immediately in bowls, garnished with parsley and enjoy!

How long to cook meat stew in slow cooker? This recipe requires 7 to 8 hours at low temperature and then an additional 30 minutes if you are thickening the broth. While you can cook over high heat for 3-4 hours, I don’t recommend it. Low and slow is the way to go to achieve tender, crumbling meat and deep flavors!

How to thicken a slow-cooker meat stew? If you want the liquid to be more like a sauce, you will create a suspension. In a small bowl, whisk the flour and 1/2 cup of stew broth until combined and soft. Slowly stir the mixture in the slow cooker. Cover and cook over high heat for an additional 30 minutes, or until thickened.

Recipe notes

  • Do not cut the meat cubes too small or they will fall apart before you can absorb all the flavor of slow cooking throughout the day.
  • Brown the meat! Browning the meat before adding all other ingredients is key! Forming a pleasant crust on all pieces of meat blocks in flavor. This extra step is worth it!
  • You can peel your potatoes if you want, but for new baby potatoes, it is not necessary. If they are on the extra-large side, you may want to butcher them.
  • Chicken broth

  • can replace beef broth if that’s all you have, although the overall flavor won’t be as deep.

Storing leftovers

Stews are great the next day, so make sure you save enough to have leftovers for lunch!

How long does beef stew last? Let the stew cool completely, then transfer it to airtight containers and store it in the refrigerator for up to 4 days. Can I freeze beef stew? Yes, you can freeze meat stew (although vegetables tend to soften and break down into smaller pieces after thawing). Be sure to leave a 1/4-1/2 inch space in the container to allow for expansion. Properly stored, it will keep in the freezer for up to 3 months. If you know beforehand that you’ll want to freeze the stew, wait to thicken it until you reheat it.
