Sheet Pan chicken fajitas
Guys, winter weekday meals are a struggle It would be for me. Same? I mean, almost every day my kids walk through the school gate demanding, “MOM, what’s for dinner?” And my answer is usually: mmm, I have NO idea…
It’s kind of a common joke in our family, because I almost never know what’s for dinner ahead of time. Summer weekday dinners are infinitely easier, as there is more than one method to my madness. My husband lights the grill and cooks some kind of protein, while I prepare an easy side dish or two. And together we did it!
But during the colder months, that method breaks down. Because who wants to grill when it’s 33 degrees and drizzle? #NotIt

Here’s the thing: I know my strengths and I know my weaknesses. Meal planning is definitely NOT one of my strengths (maybe because it seems so rigid?), but preparing a last-minute dinner is. So instead of planning our meals for the week, I make sure to pick up the ingredients for some of our favorite quick and easy meals when I do my weekly shopping.
Like these easy pan chicken fajitas that MY whole family loves! They have all the flavor of the most laborious grilled chicken fajitas, but they can be ready in a fraction of the time, thanks to a few simple shortcuts…

Baked Chicken Fajitas Ingredients These
baked chicken fajitas
are made super simple courtesy of Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips. Starting with these fully cooked and frozen grilled chicken strips allows me to skip many of the messier and slower steps of preparing chicken fajita ingredients.
Uh, healthy? Yes! They are 100% natural, meaning they are minimally processed with no artificial ingredients, so I can feel good serving them to my family.
What else do you need to make these easy chicken fajitas? Just a few additional simple ingredients that are the ones I almost always have on hand: colorful peppers, red onion, garlic, chicken fajita seasoning and fresh limes.
Of course, you’ll also need some flour tortillas to serve and all your favorite fajita toppings. Or keep it simple and give up the ingredients, because they are totally tasty on their own. But if you feel like you want to make your fajitas a little extra, the coverage options we love are: pico de gallo, guacamole, shredded cotija cheese, crema mexicana (crème fraîche mexicana poured), chopped cilantro, and lemon slices to squeeze on top.
PRO TIP: Want to save EVEN MORE TIME on this easy weekday dinner? Buy all of their ingredients, including Walmart’s Tyson® Grilled & Ready chicken, using Online Grocery Pickup! If you haven’t tried it, it’s an incredibly easy way to buy groceries in an instant.

The main thing I love about pan recipes is that there is usually only one pan to clean, and this pan fajitas recipe is no exception. Simply mix the chicken, peppers, red onion, and garlic with some olive oil and seasoning, and bake at 425 degrees F until the chicken heats up and the vegetables are crispy and tender. Squeeze some fresh lemon juice on top, and it’s ready to serve.
How easy is that? The easiest thing I would say… In the meantime, you can prepare all your fajita ingredients, help the kids with their homework, prepare morning lunches, and/or have a glass of wine, because you just ticked off the hardest parts of your night off your list!

- The same with the cut grabbing the pre-cut fajita vegetables that Walmart carries in the refrigerated products section.
- And save some dice with the fresh pico de gallo that you can find in the same section… (Though there’s really something to be said for making your own with this fresh tomato sauce recipe I always have on hand!)
