Texas Slow Cooker Beef Shoulder Roast – Mason Woodruff
The slow pot beef shoulder roast is the perfect choice for shredded beef to make tacos, sandwiches, loaded fries or macaroni and cheese, and more. The shoulder roast is a bit leaner than the roast de chuck, but it still works great for slow cooking and crushing.
With just five ingredients, this is one of the easiest slow-cooked shredded meat recipes you’ll find. I’ve also included my favorite ways to serve it in the post below. But let’s take a look at how to do it first.
to Make Roast Beef in a Slow Cooker
To make this Texas-style shredded meat, you’ll need beef fajita seasoning, ranchero seasoning, pickled jalapeno peppers, and a large white onion. You can also add some butter or beef tallow, but that’s optional.
You’ll also need a beef shoulder roast or a chuck roast. If you’re looking for even leaner options, choose the eye of the round or round bottom roast. My low-fat pot roast and barbecue meat are used to make surprisingly moist and tender shredded meat with very little fat.
I used the same H-E-B mix from my Mexican shredded beef and grilled meat fajitas recipes. It includes a meat tenderizer in addition to salt and spices. So if you’re using another seasoning, look for something similar in the ingredient list.
The seasoned beef goes in the slow cooker on top of a bed of sliced white onion. Roasting onion and beef shoulder will release enough liquid and fat during slow cooking to avoid the need for extra broth or cooking liquid.
Top everything with some Hidden Valley ranch seasoning
(or homemade ranch seasoning) and pickled jalapeno peppers before covering and cooking slowly for eight to ten hours. I like to add a few small slices of butter for a good measure, but the meat comes out fine without it.

Once the meat is pulled, I like to let it hang out with the remaining onions and juices for about 30 minutes before serving. The slow-cooked beef shoulder roast will absorb most of the juices while you rest.
You can also add shine to the dish at this point with some fresh herbs and sour through lemon juice or your favorite vinegar. Although if you plan to serve this in various ways, it might be best to play it safe with added flavors.

This easiest solution is to throw your slow pot shoulder roast into some tortillas for amazing shredded beef tacos. It also makes excellent enchiladas, burritos, taquitos and just about any other Tex-Mex and Mexican dish you can think of.
With the onion flavor of this shredded meat, it also works great for dishes like macaroni and cheese, loaded fries or baked potatoes, sandwiches and other meat-filled dishes.
