Today’s recipe is very special, because it comes from my friend Lindsay’s new cookbook (from the Cotter Crunch blog), Nourishing Superfood Bowls: 75 Healthy and Delicious Gluten-Free Meals to Fuel Your Day.
Not only is the book absolutely MAGNIFICENT, but it takes the most amazing photos, but it’s full of easy, healthy, and super delicious bowl recipes.
I had a hard time deciding which recipe to share with you, because they are all so colorful and sound so tasty, but once I saw the Spanish quinoa and slow cook shrimp, I knew that was exactly what I needed to share with all of you today.
How are shrimp made in the slow cooker?
I’ve had that question on my mind for SO long. I don’t know why, but I’ve always been really afraid to make shrimp in my cooking pot.
But let me tell you.
It’s easy… totally foolproof and SUPER delicious.
Take frozen shrimp, throw them in the slow cooker with all the other ingredients, and it will be perfectly cooked in about 2 hours!
Because it is cooked together with spices and broth, it is not only perfectly cooked, but also perfectly seasoned!
What ingredients are in the Spanish slow cooker and shrimp quinoa?
- Quinoa
- broth
- Olive oil
- Tomatoes roasted on
- fire Honey
- Lemon juice
- Cayenne
- Worcestershire sauce
- Smoked paprika
- powder
- Dried cilantro
- spinach Frozen
- Green onion
- Goat cheese
- Fresh herbs
- Salt and pepper

So how is Slow Cooker made Spanish shrimp and quinoa?
Literally throw all those ingredients (minus green onion, goat cheese, herbs, and salt/pepper) in your slow cooker and let it cook for 2 to 4 hours.
Try and season with salt and pepper, then serve with a generous pinch of green onions, goat cheese, and fresh herbs of your choice.
Whatever you do, don’t skimp on goat cheese, it’s SO spicy and the perfect complement to smoked paprika and fire-roasted tomatoes.
I can’t believe it took me so long to cook shrimp in the cooking pot… I’m absolutely obsessed.
