I have a case from Monday.

Anyone with me?

Trevor and I had a great weekend, which always makes it harder to get back to reality.

We took Teddy for a walk, went to the pool, visited some new restaurants in downtown Raleigh, watched a movie (if you haven’t seen the new Mission Impossible, dooooooo), and went driving on Sunday to see all the cute neighborhoods Raleigh has to offer.

It was bliss.

The only thing that helps me get through today?

Knowing that dinner is already done and waiting for me. Woot woot!

Monday’s call for quick, easy, but still totally delicious dinners.

I KNOW they are all with me.

Enter: Spanish shrimp and slow cooking quinoa!

Throw a bunch of stuff into your cooking pot, set it, forget it, devour it!
