Crock Pot Chicken and Rice Soup – The Roasted Root
Hearty and healthy chicken and rice soup, made in the comfort of your slow cooker!
This recipe also includes an instant pot option for making chicken and rice soup in your pressure cooker.
Let’s talk about the weather. It’s really all I can think of. More specifically, I’m so ready for Hell Kid, it’s not even fun.
Give me that snow, let the precipice collapse into the most epic of volumes!
I can’t wait for my car to get stuck in the snow, float down the mountain through a sea of dust on my snowboard, and warm myself by a fire with a mug of beer full of hot toddy… as in the biggest single of Hot Toddy known to man.
Truth: In the midst of all this discussion about snow, here on the west side, we’re having the Most beautiful Indian summer. Blue skies, perfect conditions for trail running//mountain biking… The climate of the soup does not appear even long in the imagination.
But the sunny weather doesn’t stop my craving for comfort food, and it certainly hasn’t stopped me from dusting off my clay pot and leaving it on the kitchen counter until next summer

I also haven’t stopped fantasizing about being locked in the snow inside my house with piles of white fluff up to the ceiling.
While clay pots definitely seem like the tricky way to eat cheating pumpkins to prepare meals, I can’t help but love it. Put it on, forget it, let it stew for hours and eat it hot from the pot.
I love the sheer volume of food I can prepare in my pot, it certainly facilitates lunches and is always helpful in feeding guests random passersby.
How to make chicken soup and clay pot rice:
Honestly, if you want, you can simply throw every last ingredient into the clay pot, Cover it, and set it to low for 4 to 6 hours.
If you like the bold taste of onion in your soup, you can pre-sauté the onion and other vegetables. I do this extra step because I feel like it gives the soup an amazing taste.
Simply add a small amount of cooking oil to a pan and sauté the onion, carrots, celery, and garlic until very fragrant. Add the spices/herbs, and sea salt and sauté an extra minute.
Once the
vegetables have softened a bit, add them to your slow cooker, along with the remaining ingredients.

Simmer and cook slowly for 4 to 6 hours, or until rice is well cooked

Serve with your choice of crackers, bread, etc.
Isn’t it funny how sometimes the easiest recipes turn out to taste the best? This slow-cooked chicken and rice soup is very easy to prepare, and it turns out to have a lot of chicken herb flavor, and it’s so thick and comforting. A victory for weekday meal preparation!
The chicken comes out super tender and is so filling and satisfying, you can also double the recipe so that it has soup for days.
Instant Pot instructions:
- Connect your Instant Pot and press the Sauté button. Add the oil and let the pot warm for a couple of minutes. Add the onion and chicken and brown the meat for 1 to 2 minutes (avoid cooking).
- Add the remaining ingredients to the pot and secure the lid. Press the soup/broth function and set the time to 15 minutes, keeping the ventilation sealed. Let the pressure cooker release manually (enter Keep Warm mode) for 10 minutes.
- by turning the steam valve to vent and let all the pressure be released. Once the pressure has been released, you can remove the lid and serve the soup!
