Slow Cooker Chicken Lo Mein + Crock-Pot + meal prep + recipe

What dish comes to mind when you think of comfort food? Ours is definitely anything with noodles or pasta. I can’t even start picking a favorite from this LIST. Totally the best comfort food!
Along with chow mein and fried rice, Lo Mein is the perfect dish for cleaning the fridge. It is a super easy dish to customize. Cook with your favorite vegetables and any protein you want.
Beef, shrimp, pork or tofu, you decide!
This easy chicken lo mein is one of our favorite takeaway dishes and is prepared in just 30 minutes. Since I’m crazy about clay pot recipes, I decided one day to try it in my slow cooker.
The flavors came out SO amazing and it was seriously the best decision ever!
Some useful tips to keep in mind for this easy slow cooker chicken Lo Mein:
- Season the chicken with salt and pepper and then pour the sauce over
- Add the vegetables and dry noodles fresh precooked or cooked NEAR the end or JUST BEFORE serving. This will ensure that the noodles do NOT become too soft and soft.

I have used fresh egg noodles, spaghetti noodles and linguine noodles. They will all work great!
- Change it with your favorite vegetables. I used baby bok choy and carrots here and have also used snow peas, baby corn or peppers successfully in the past.
- Use pork instead of extra firm or fried chicken or tofu like this vegetarian version

Some tips for preparing meals:

- Make the noodles the day before and store them in an airtight container in the fridge

in the fridge Mix the sauce ingredients the day before and store in an airtight container in the fridge
