Crockpot Ground Beef Casserole – Amanda’s Cookin’ – Slow Cooker

The Crockpot ground beef casserole is an easy weekday dinner made with ground beef, corn, pasta, onions and peppers that are well seasoned and topped with melted cheese.

Why this recipe works
If you’re looking for an easy-to-throw away meal to use some ground beef, this ground beef casserole is the perfect solution. The ground beef casserole quickly became one of my most popular recipes on the blog, so making a slow cooker-friendly option was a must. It has all the same tasty components, except that it’s made in the cooking pot rather than a baking dish.
Using simple ingredients that provide tasty results, this pasta casserole with cheese and ground beef is definitely one you’ll want to keep in the dinner rotation.

Ingredient Information and Substitution Suggestions
MEAT – You can use ground beef, ground turkey or even ground chicken depending on your taste preferences. Other ground meats such as venison or bison can also be substituted, so this is a very versatile recipe. Ground Italian sausage mixed with ground beef or turkey would also be a great flavor combination!
ADDITIONS – While I’ve included Red Gold diced tomatoes in the ingredient list, you don’t have to use that brand. The key was that they already have green chiles added. If you can’t find them, you can use a regular can of tomatoes and add a 4-ounce can of green chili peppers. Instead of orange pepper, you can use red, or skip it altogether if necessary. You can also use drained canned corn instead of frozen corn.
CHEESE – Cream cheese adds a lot of creaminess to this dish, I wouldn’t recommend skipping it. You can find a blend of already crushed Mexican cheese at the grocery store. However, if you have a preference for cheese, feel free to use whatever you want. I recommend you have a cheddar cheese and a jack cheese in the mix.
How to Make Crockpot Ground Beef Casserole

- In a skillet over medium heat, brown the ground beef. Drain the beef.
- Place the drained ground beef at the bottom of the cooking pot.

- Stir to combine. Place the lid on the slow cooker and simmer for 6 hours
- After the time is up, add the raw pasta to the slow cooker and mix to combine.
- Let the pasta cook for 20 minutes
- Add 1 cup of cheese remaining, recover and let the cheese melt.
- Top with chopped green onions. Enjoy!
