The inspiration behind these slow cook tacos! Here’s

the thing. We miss New Zealand. I like it a LOT! In fact, we are on a quest to get back there. Ahh, yes, the beauty and simplicity of that country. And since my husband is from the South Island, we often receive care packages filled with his favorite family treats. They are very attentive and know exactly when my husband (aka kiwi) needs his licorice and marmite fix!

One of the things I like to do when we both miss New Zealand is to make a healthy meal with lamb, because in New Zealand, lamb is popular, delicious and it’s a very nutritious meal. Besides, I really can’t make a full meal of licorice and marmite, yet, haha! The nostalgic food (lamb) I prepare for him is not prepared as they do in New Zealand, but it is the thought that counts. Right? So today we’re putting a spin on three of my favorite dishes (and my husband’s favorites)…

Lamb tacos inspired by the Mediterranean!

But wait, it gets better. These are…

TACOS slow cooker!

A bit of

Mexican (taco style) plus a bit of Mediterranean/Greek. Greek marinade with red pepper, olive and feta dressing. Slow-cooked lamb (think Kleftiko), a simmered lamb dish! Also, lamb is a big hit (custom) in New Zealand, where my husband is from. is a specialty in Greece. Do I get wife bonus points for that? Say yes!

How to make greco tacos with lamb

Simmered Simple. Brown the meat in a pan. Then mix it in the clay pot with your marinade and seasonings. Let the meat cook for a few hours while you do other things, VOILA!

Just before serving, heat tortillas or flatbread. I think giving them a good charr over the gas oven is best. Extra crispy on the outside, soft in the middle.
