Do you think slow cooking is only for winter? Forget about it!
There are many reasons to keep cooking slow all year round… and many more amazing spring and summer slow cooker recipes to share.
So let’s discuss the reasons for using your slow cooker in the spring…
One, we are often busier in the spring than in the cold, dark winter months. Spring parties, sports, and work events can take up many hours of the night. Using a slow cooker allows you to prepare and forget dinner, so you can spend more time enjoying the warm weather.
Two, using a slow cooker saves energy and keeps your home cool. If you’re one of those people who refuses to use the oven in the spring and summer, you can still “bake” in your slow cooker.
Three, we all have a favorite slow cooker recipe or a beloved slow cooker soup, but there are hundreds of stretchy meals you can make in the slow cooker that many people don’t consider.

Easy Breakfast Quiche Recipe
Chop all the vegetables and ham. Then place the onions, peppers and garlic in a small nonstick skillet and seal over medium heat to soften, 3-5 minutes. Remove from heat.
In the meantime, place an 18-inch piece of parchment paper on the countertop. Place the two rolled cake crusts on the parchment, superimposed in the center, to create a long piece of crust, about 17 to 18 inches long. Press the overlapping portion, then move to a large 6-quart oval slow cooker. Gently place the crust in the folds of the slow cooker and press the excess crust against the sides. Crimp the edges, making sure the bark rises 2 1/2 to 3 inches up the sides.
In a large bowl, beat the eggs, cream, ground mustard, and 1/2 teaspoon salt until soft and foamy. Beat the black pepper to taste. Then stir all the vegetables, ham and cheese in the egg mixture. Pour the mixture into the prepared crust.
Press the sides of the bark against the vessel again to make sure they are secure. Then place a long piece of paper towel over the slow cooker and cover with the lid. Pull the edges of the paper towel so it doesn’t sink. (The paper towel with absorbent condensation.) Turn on the slow cooker over high heat for 3-4 hours, until the edges of the crust are brown and the center of the quiche is set. Lift all the quiche from the slow cooker along the edges of the parchment paper. Cool for 10 minutes, then cut and serve.

Frequently Asked Questions
Can I do this
ahead of time and store it in the refrigerator
? You could do this the night before, but
I wouldn’t let the liquid mixture settle on the cake crust more than 12 hours before cooking
.
Can I make this a quiche
without bark?
I’ve never tried it without bark, but I don’t see why that wouldn’t work. Just make sure you have a solid piece of parchment paper underneath to lift it easily.
How long will the leftovers last in the fridge?
You can store your leftovers in the refrigerator for up to 4 days when stored properly. Be sure to let it cool completely before wrapping it tightly with plastic wrap and then aluminum foil so you can hold as much moisture as possible.
Reheat in the oven to 250 degrees F for about 20 minutes or until hot enough. You can also serve it cold.
Can I store this easy
quiche recipe in the freezer? You can freeze
this quiche for up to 3 months, but know that the filling will cause the crust to soak, so I wouldn’t suggest freezing leftovers.
