Spicy brown rice with sausages and peppers cooks in the slow cooker in a few hours and only needs 25 minutes of preparation time! And this amazing dish has lots of sausages and peppers and not too much rice, so surprisingly it’s not that high in carbs if you eat it as a side dish.

If there’s one thing I’ve learned in 10+ years of food blogging, it’s that photo can make or break a recipe! I made this delicious spicy brown rice with sausages and peppers a few years ago, and while I loved the recipe (and made it a few more times since) I never felt like the original photo showed how tasty this dish really was. I’m so glad I finally have new photos to show this recipe a little better!

If you’re someone who generally doesn’t like slow cooker recipes where you have to brown the ingredients before they get into the slow cooker, I hope I can convince you to try this one. Seriously, this rice dish with sausages and peppers was so easy and good. It only takes about 25 minutes to cut and brown the sausage and chop the vegetables and then cooks for two hours in the slow cooker while you’re busy doing other things.

What ingredients do you need?

How to Make Slow Cooker Rice with Sausages and Bell Peppers Even Lower in Carb:

If you limit this recipe to a small serving of side dishes, it has less than 10 net carbs per serving. If you want it to be even lower carb, it would double the amount of sausages and peppers and keep the same amount of rice.

Can you make this slow cooking sausage and peppers with pork sausage?

I confess to having a strong preference for Italian turkey sausage, but lately turkey sausage is becoming hard to find in Utah. And you’re browning the sausage separately so there’s no danger of getting too much fat in the finished dish, so I think pork sausage will be fine for this recipe.

Can you use other vegetables for slow cook rice with sausage?

You can definitely swap green pepper for red pepper if you prefer. Other vegetables I think would work here include celery, shredded cabbage, chopped kale or chard, or green peas.

What size slow cooker did I use?

I used my favorite 3.5 quart slow cooker (affiliate link) for this recipe, but any slow cooker that has about 3-4 quarts will work.

How to Make Slow Cook Spicy Brown Rice with Sausages and Bell Peppers:

  1. I used my favorite hot turkey Italian sausage; Squeeze the sausage from the links and brown while chopping the green pepper and onion.
  2. Put the sausage in the slow cooker and

  3. sauté the green pepper and onion for 2-3 minutes before adding to the slow cooker.
  4. You will need a cup of brown rice from Uncle Ben and 2 cups of chicken broth or broth.
  5. Stir the rice and broth in the sausage, peppers, and onions you’ve added to the slow cooker, along with the Spike Seasoning or other all-purpose seasoning, salt, and cayenne pepper.
  6. Cook over high heat for 2 hours and you will have a perfect spicy brown rice with sausages and peppers.
  7. Garnish spicy slow-cooked brown rice with sausages and peppers with sliced green onions (or parsley) if desired and serve!
