OH MY GOD, THIS YELLOW CURRY CHICKEN! ❤️ Seriously, it’s one of my favorite weekday foods of all time, so make those shopping lists because this is a recipe you NEED to make.

Abra and I first tried the recipe a few years ago before my maternity leave, and we couldn’t help but rave about how delicious it was. Seriously, we still talk about it years later. It’s one of those recipes to come back to again and again because it’s THAT good. And let’s be honest, there’s nothing better than a tasty, creamy curry bowl full of vegetables during the cold winter months.

So my curry lovers, this slow cooker yellow chicken curry is for you. It’s dairy-free and gluten-free, and if you haven’t eaten curry before, then it’s time to give it a try. Promise you’ll fall in love!

slow. Just throw everything away and simmer to perfection throughout the day! Another thing to love? Rainbows of vegetables cooked slowly with hot spices; It’s tasty, full of umami flavor, filling and incredibly nutritious. To make this yellow chicken curry you will need these ingredients

: Coconut milk:

  • We are using a can of light coconut milk to create a creamy and tasty curry sauce
  • .

  • Broth: Feel free to use chicken broth or water for that curry “sauce” the chicken will be cooked in.
  • Peanut butter: A couple of tablespoons of natural creamy peanut butter gives this dish an amazing flavor, don’t skip it, but feel free to use cashew butter if you want. I love the peanut butter from Wild Friends, and you can use the code ‘AMBITIOUS15′ to get 15% off!
  • Soy sauce: A little soy sauce gives curry that tasty, salty punch.
  • Garlic and ginger: I highly recommend using fresh garlic and ginger, both of which are very nutritious.
  • Spices: We’re adding yellow curry powder, turmeric, cayenne pepper, salt, and freshly ground black pepper to bring out all those curry flavors.
  • Chicken: I like to use boneless, skinless chicken breast, but you can also use chicken thighs.
  • Vegetables: We are adding a rainbow of beautiful vegetables such as carrots, onions, red peppers, sweet potatoes and peas.
  • Garnish: Top your bowl with some fresh cilantro. You can also add a splash of lemon juice for extra shine.

Is yellow curry spicy?

This Thai yellow chicken curry isn’t naturally spicy, so this healthy dinner is pretty mild in spices if you’re buying regular curry powder or mild yellow curry powder (which tastes sweeter than spicy).

If you like a heat kick (like me) be sure to include cayenne pepper with your spices! With or without the added spice, this curry has bold, warm flavors that you’ll love.

Slow Cooker Making this healthy yellow chicken curry in the slow cooker is easy!

  1. Beat the ingredients of the “sauce”. Start by adding your coconut milk, broth, peanut butter, soy sauce, garlic, and ginger to your slow cooker. Beat these together and then add all the spices.
  2. Add chicken and vegetables. You will then add your chicken breast directly to the slow cooker along with your sweet potato, carrots and onion. Save the pepper and peas for later so they don’t become soft! Stir and make sure everyone is covered by the sauce.
  3. Cook and crush. Cook curry over high heat for 3-4 hours or over low heat for 6-7 hours. Once done, remove the chicken with a slotted spoon, crush it with two forks and return it to the slow cooker.
  4. Finish with vegetables and serve. Lastly, add the red bell pepper and peas, and cook this over high heat for another 10-20 minutes until the pepper is tender. Garnish with cilantro, serve with rice or naan and enjoy!

on the stove

Yes, you can easily make this healthy yellow curry chicken on the stove if you wish! Here’s how:

  1. Cook the chicken. First, add some olive or coconut oil to a large pot and place over medium-high heat. Add the chicken and cook until it is no longer pink. Transfer cooked chicken to a cutting board and use two forks to crush it. Alternatively, you can cut the chicken into bite-sized pieces.
  2. Sauté vegetables. Add a little more olive or coconut oil to your pot and add the following vegetables and herbs: garlic, ginger, sweet potatoes, carrot, and onion. Cook for 5 minutes or until onions begin to soften.
  3. Add the ingredients of the “sauce”. Next, add the spices for 30 seconds before adding the rest of the ingredients of the “sauce”. You may need to add 1/2 cup-1 cup more broth if needed. Let cook 5-10 minutes more, then add cooked chicken, red pepper and peas; Cook over medium-low heat for 10 minutes. Garnish with cilantro and serve with rice or naan.

Store this yellow chicken curry in the refrigerator for up to 4 days in an airtight container

  • To freeze: Make sure you don’t overcook the vegetables. Let the curry cool completely before transferring it to a freezer-safe bag or container. Freeze for up to 2 months. I wouldn’t recommend freezing yellow chicken curry with rice.
  • To reheat: thaw chicken curry in the refrigerator. While the curry is thawing, feel free to make rice, cauliflower rice, or quinoa to serve with it. Reheat on the stove or microwave for 2 minutes until warm.
