Shree begins The Essential Rice Cooker Cookbook with a brief introduction and how he developed the idea of the cookbook. She has put together a large collection of different ways to use rice cooker!

Many of the dishes were influenced by their Indian heritage and other flavors from around the world. Before we get to the recipes, you have a short guide with rice cooker tips and tricks to help you get started.

The chapters are divided according to the following: main courses based on rice, pasta and noodles, meaty main courses, grains and soups, small plates, brunch and desserts. The content has a list of recipes included with the page number for easy reference.

Bacon and potato

soup

heating

Since the weather will (hopefully) start to cool soon, I was particularly drawn to this hot bacon and potato soup. It was so easy with the rice cooker too!

The pieces of bacon are fried in butter until crispy, then combined with onions, herbs, potatoes and garlic. The whole mixture is simmered in vegetable broth until the potatoes are tender.

The soup is finished with some light cream and whole wheat mustard. With the help of a hand blender, the mixture is carefully mixed a few times to create a combination of silky and slightly thick textures. Serve hot with reserved crispy bacon and sliced green onions for garnish.

If you

don’t have a handheld blender, you can carefully transfer (it will be hot!) transfer half of the soup to a blender and puree until smooth before adding it back to the rice cooker and serving it

.

Shree mentions that you can add cheese for a more indulgent version. She recommends some shredded or Swiss cheddar cheese at the end of cooking and give it a couple of minutes to melt.

The indulgent gnocchi Cacio e Pepe was one of my favorites. The mealy potatoes are cooked in the rice cooker until tender, then crushed and combined with flour to form the homemade gnocchi. To finish, it is cooked in the indulgent and creamy sauce based on Pecorino.

The nutritious chicken, ginger and rice soup was such a comforting meal! Everything came together easily as well. The chicken pieces are simmered in broth until tender with ginger, garlic and rice. It is served with scallions, peanuts, green chili peppers and chili oil for even more flavor.

The Spanish chorizo in red wine was a fairly easy and flavorful appetizer. Slices of Spanish chorizo are simmered with garlic, onion, red wine and honey until the mixture is thick and almost syrupy. It was perfect to pair with a crusty bread.

I made the autumn apple pie oatmeal as one of the first recipes based on the fall of the year. The oatmeal is simmered in a mixture of milk and spices until tender and creamy. It was delicious topped with apples, nuts, granola and cinnamon.

The rice cooker essential cookbook

is a great choice for those looking for different uses for their rice cooker. Many of the recipes are prepared in as little as 30 minutes or less with minimal preparation. There is a good variety of snacks, meats, seafood, vegetarian meals and desserts.

Many of the ingredients can be found in the average American supermarket. Additional search may be required to locate items such as palm oil, Scotch chili peppers, moong dal, glutinous rice, dried shiitake mushrooms, saffron, cardamom, gochujang, grits, dark soy sauce, curry leaves, Kasmiri chili powder, mustard seeds, Sichuan peppercorns, and more.
