STEP ONE: Place carrots, potatoes and onions in the 6-quart slow cooker. Mix the vegetables with black pepper, kosher salt, Italian seasoning and olive oil. Cover well and evenly.

STEP SIX: Cover the clay pot and cook over high heat for 3 to 4 hoursor over low heat for 6 to 8 hours. Check the temperature of the triple tip with an instant meat thermometer. Serve and enjoy.
