This easy homemade vegetable soup is loaded with vegetables and makes a comforting, delicious, healthy and filling soup recipe!

This

vegetable soup recipe has been a favorite of my family for as long as I can remember! Full of vegetables, it’s naturally low in fat and calories, making it a hearty but healthy soup recipe. I love that you can customize the vegetables to your personal preferences and even make them as a beef vegetable soup if you prefer.

is so easy to make at home and tastes much better than canned soup in my opinion! My grandmother and mother made this soup while growing up and it’s one that’s also in regular rotation in my house. Since it’s so versatile, I love making it as a simple vegetarian version and then at other times I’ll do it with beef or turkey for extra protein.

What vegetables to include in vegetable soup

For vegetables, the options are limitless! I usually use many of the same vegetables in this soup as my grandmother and mother, but I also love using the vegetables I have on hand. My favorite vegetables to include are:

  • onion
  • corn

  • carrots
  • celery okra
  • green

  • bean tomatoes
  • beans lime
  • potatoes

our freezer, such as green beans, corn, okra, or even a bag of mixed vegetables. During the warmer months, I love using fresh vegetables from our garden or produce stand. Additional vegetables that are delicious in this vegetable soup are English peas, spinach, kale, mushrooms, or cauliflower.

How to Make Vegetable Soup

For this recipe, I have included the slow cooker instructions on the recipe card. However, you can also quickly and easily make this soup recipe on the stove. I’ve included those instructions below for you as well.

Stove Instructions

You can also easily make this soup on the stove and without a slow cooker!

  • Brown the meat or turkey (if you use it) in a Dutch oven or in a heavy bottom soup pot over medium heat. Drain any drips from the golden flesh and discard the drips.
  • Add all remaining ingredients for the soup and return the pot to the stove.
  • Reduce heat to a simmer and let simmer for 15 minutes.
  • Test and adjust seasonings as needed.

To make this soup ahead, cook the soup as directed and let the soup cool completely. Then place it in the refrigerator in an airtight container and store it for up to 5 days.

Let the soup cool. Place it in a freezer-safe container and store for up to 3 months.

To reheat,

let it thaw in the refrigerator overnight and reheat the soup over medium-low heat on the stove until completely heated, about 15 minutes.
